Reese’s Pieces Peanut Butter Bars

So, I made these Chocolate Peanut Butter Oatmeal Bars a few months ago and haven’t been able to get them out. of. my. mind. 

That layer in the middle is like a silky peanut butter fudge and it is amazing!

Amazing, that is, if you like waking up in the middle of night to slip downstairs and have one with a cold glass of milk and you didn't even realize you did it until you wake up in the morning to find crumbs on the counter and an empty glass and your husband looking at you like he’s thinking about planning some sort of intervention.

True story.

Anyway! One of my friends doesn't like chocolate. I know. But I’m still her friend. And people who don’t like chocolate need love too. Probably extra love to make up for the lack of chocolate in their lives.

I’d been planning on playing with this recipe and decided my first experiment would be for my special friend [cough] Dawn [cough] who doesn't like chocolate so she could make something for her boys and enjoy them herself too.

Substituting chocolate chips for Reese's Pieces was a no-brainer because of the peanut butter but what I DIDN'T see coming was how much I'd like the little candy coated CRUNCH the Reese's Pieces brought to the party. Holla!

These are absolutely PERFECT for Halloween because of the colors but you could sub M&M's too and make them for just about any holiday

Reese’s Pieces Peanut Butter Bars

Reese’s Pieces Peanut Butter Bars

A simple recipe for oatmeal bars stuffed with peanut butter fudge topped with Reese's Pieces candies perfect for fall and Halloween!

Ingredients

  • 1 cup butter (2 sticks), melted
  • 1 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 2 1/4 cups quick-cooking oats
  • 1 14-ounce can sweetened condensed milk
  • 1/2 cup creamy peanut butter
  • 1 10.5-ounce bag Reese’s Pieces candies (about 1 1/2 cups)

Instructions

  1. Line a 13x9 baking pan with aluminum foil then spray with cooking spray; set aside. Preheat oven to 350 degrees.
  2. Combine butter, brown sugar, baking soda and salt in a large bowl and mix with an electric mixer on low speed until smooth.
  3. Add flour and oats then continue mixing until well combined. Reserve 1 heaping cup oat mixture for later use.
  4. Press the remaining oat mixture into the bottom of the prepared pan. Bake at 350 degrees for 10 minutes.
  5. Combine peanut butter and sweetened condensed milk then mix until smooth. Pour peanut butter mixture over semi-cooked oat crust and carefully spread evenly over crust.
  6. Crumble half of the reserved oat mixture over peanut butter mixture. Top with Reese’s Pieces then crumble the remaining oat mixture on top of the Reese’s Pieces. Continue baking for 25 minutes or until oat crumbles start to brown.
  7. Cool completely in pan then remove by lifting up on aluminum foil. Cut into bars and store in an air-tight container.

Hi there! While I’m not able to respond to every comment, I try hard to answer any questions that haven’t been addressed in the post, recipe or in other comments.

I can tell you now 1) I have no idea if you can substitute Minute Rice or brown rice in my recipes because I’ve never used them and 2) If I know how to convert a recipe to a Crock Pot version, I will make a note about it (otherwise, I don’t know).
