Easy Spanish Rice with Rotel

A Spanish Rice side dish recipe cooked on the stove with Rotel tomatoes and simple spices that's perfectly seasoned and easy to prepare.

Author: Mandy Rivers | Published: 9/22/26

This easy stovetop recipe goes perfectly with so many meals! From Southern favorites like pork chops and smoked sausage to Mexican recipes like carnitas and enchiladas, this is a recipe that is super handy to have around!

You can jazz this up by using fresh garlic (I use garlic powder to keep things easy) or by adding a bit of bacon (or bacon grease!).

You can make this into a main dish by adding sausage and ham... though if you're thinking about doing that, I'd use my recipe for Spanish Rice with Ham as it's a little more authentic (and it's one of my very favorite meals!).

Rice with tomatoes can lean very Southern. Traditional Spanish Rice doesn't make you think of the South but we have a long history of combining rice and tomatoes (even if it's just to add sliced fresh tomatoes to the table if we're serving any sort of rice).

I grew up eating Stewed Tomato Gravy over rice and make something very similar to this we simply call Tomato Rice using plain canned diced tomatoes (not Rotel) without all the spices (just salt and pepper).

We also have something called Red Rice in the Lowcountry (the area spanning near and between Charleston and Savannah) which is verrrry similar to Spanish Rice but with Gullah and Geechee roots.

WHAT MAKES THIS DIFFERENT THAN TRADITIONAL?

A few things actually! Traditional Spanish rice has fresh green bell peppers (sometimes celery too) and most often, some sort of smoked meat. It is often baked too (but not always).

  • No Green Bell Peppers - This recipe was made to be QUICK and EASY so we use canned Rotel tomatoes (diced tomatoes with green chili peppers), letting the green chili peppers in the Rotel sub in for the green bell peppers.
  • No Meat - Since this is a side dish AND it was created to be made quickly, there's no ham, bacon or sausage. You'll be serving this alongside a main dish which will likely be a protein or have lots of meat in it.
  • Stovetop Recipe - Many (not all - don't yell at me) traditional Spanish Rice recipes bake in the oven but this recipe cooks up quickly on the stove.

COUNTRY-STYLE FOOD I LIKE TO SERVE IT WITH

As I mentioned above, Southerners love tomatoes and rice and here are some of the dishes I like to serve this easy version of Spanish rice with:

  • Smoked Sausage - cooked in a skillet, broiled or even grilled
  • Baked Country-Style Ribs - baked low and slow with BBQ sauce
  • Ham Steak - pan-fried whole or cut into smaller servings.
  • Pork Chops - season with S&P then just pan-fry in a little oil
  • Salmon Patties - tomatoes and rice just go with salmon patties for me
  • Chicken Fritters - similar to salmon patties but with canned chicken

MEXICAN DISHES THAT GO GREAT WITH IT

Because this is so much like Mexican Rice, it's perfect for serving with your favorite Mexican recipes. I often serve this when I make these dishes:

A Spanish Rice side dish recipe cooked on the stove with Rotel tomatoes and simple spices that's perfectly seasoned and easy to prepare.

7 TIPS AND NOTES

  1. You can use any variety Rotel Tomatoes (mild, original, hot or fire-roasted). I use original and do not find the rice to be overly spicy.
  2. If you have time (and energy), fresh garlic can be used instead of garlic powder. Add 1 tablespoon when you add the rice to the onions.
  3. Bacon grease or butter can be subbed for the olive oil.
  4. If using Jasmine rice, check after 15 minutes as it will probably be ready due to shorter cooking time.
  5. A tablespoon more oil will give the rice a nice chewy texture (like Mexican rice).
  6. I like to cut any oversized tomato chunks if present so that all the tomato pieces are small and uniform in size.
  7. If using jasmine rice, reduce water to 1.5 cups and cooking time to 15 minutes.

A Spanish Rice side dish recipe cooked on the stove with Rotel tomatoes and simple spices that's perfectly seasoned and easy to prepare.

Ingredients

  • 1/2 onion, finely diced
  • 3 tablespoons olive oil
  • 1 cup long-grain white rice
  • 1 can Rotel tomatoes
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon oregano
  • 1/4 teaspoon thyme
  • 2 cups water (see notes)

Instructions

  1. Sauté onion in olive oil in a saucepan over medium-high heat 2 minutes then add rice (dry, uncooked). Using a fork to stir the bottom, cook rice until fragrant and just starting to brown (about 3 more minutes). 1/2 onion, 3 Tbsp oil, 1 c. rice
  2. Add Rotel (with juices) and remaining ingredients. Bring to a boil, stirring occasionally with a fork to ensure the rice doesn't stick to the bottom. 1 can Rotel, 1 tsp each salt & garlic, 1/2 tsp each pepper & paprika, 1/4 tsp each oregano & thyme, 2 c. water
  3. Once boiling, reduce heat to low, cover with a tight-fitting lid then cook 20 minutes or until rice is tender. Stir with a fork occasionally the first 15 minutes of cooking then do not stir the rice or uncover the pan.
  4. Fluff with a fork then serve.

Notes

  • If using jasmine rice, reduce water to 1.5 cups and cooking time to 15 minutes.
  • Use any variety Rotel Tomatoes (10-oz can).
  • Don't rinse the rice - it needs to go in dry.
  • I don't know how to convert this recipe for Minute Rice or brown rice.

Easy Crock Pot Tortellini with Italian Sausage

Home » Crock Pot » Easy Crock Pot Tortellini with Italian Sausage

A no-brown, no-boil slow cooker recipe with sausage meatballs cooked in spaghetti sauce under a bed of cheese tortellini and a creamy parmesan topping.

Author: Mandy Rivers | Updated: 10/8/26

This dump-and-go recipe requires no meat to be browned or pasta to be cooked separately. Everything is going in the crock uncooked and coming out as a zesty, saucy Italian dish with meatballs made of Italian sausage and perfectly tender cheese tortellini!

The appeal of crock pot meals (for me, anyway) is that they be really easy. I don't want to have to brown meat or cook anything separately, especially on busy weekdays.

I want to just dump and go then presto! chango!, dinner is served! Otherwise I'd just cook all the stuff the traditional way, which if we're being honest, is going to yield better results in most cases.

A no-brown, no-boil slow cooker recipe with sausage meatballs cooked in spaghetti sauce under a bed of cheese tortellini and a creamy parmesan topping.

WHY THIS RECIPE WORKS

Italian Sausage - Italian sausage links are the perfect way to make easy meatballs. Once you remove the casings, they practically roll themselves and always keep their shape. And the sausage is perfectly seasoned so no extra ingredients needed!

Spaghetti Sauce - A jar of prepared spaghetti sauce is also already seasoned (so we won't need to drag out a bunch of spices and ingredients here either) and creates the perfect base for the meatballs to cook in.

Fresh Tortellini - Fresh pasta takes way less time to cook than dried pasta so we can just toss the tortellini on top at the end, and the heat and steam in the crock pot will cook them perfectly.

Creamy Parmesan Topping - We'll heat some Half & Half in the microwave then pour it over the uncooked tortellini with some garlic powder and parmesan cheese. The starch from the pasta will bind itself to the fats in the Half & Half and parmesan which will make an easy creamy topping! This also ensures the tortellini cooks perfectly and makes them extra delicious.

HOW TO MAKE IT

The full, printable recipe card is down below but here's the basics of how to make this EASY recipe:

  1. Roll sausage links into meatballs then place in the crock (uncooked).
  2. Top meatballs with spaghetti sauce then cook on High 2-3 hours or Low 4-6 hours.
  3. Add tortellini on top.
  4. Heat Half & Half 2 minutes in the microwave, stir in salt and garlic powder then pour over tortellini.
  5. Top with parmesan cheese then continue cooking 15 minutes. That's it!

12 FAQ ON CROCK POT TORTELLINI

1. Can traditional homemade meatballs be used in this?  Sure! Start with uncooked meatballs. They will be more tender than sausage meatballs so they may not hold their shape as well but that's OK!

2. Can I use frozen meatballs instead of sausage?  Technically, yes, but I imagine the texture will be pretty "corky" when cooked this long. I would reduce the initial cooking time by half.

3. What brand Italian sausage is best?  I like Johnsonville and Publix best. The only brand I've encountered that I didn't like starts with a 'P' and rhymes with "chemo" (I think it's too firm and a little tough).

4. Should I use hot, sweet or mild Italian sausage?  I always use hot but any will work!

5. How do you remove the sausage casings easily?  Just run a sharp knife down the length of the sausage to cut the casing then you can peel it right off. It's easier than peeling a banana!

6. Won't the sausage make things greasy?  Oddly, no! Italian sausage doesn't put off as much grease as ground beef and I've never noticed any standing or excess oil in this recipe.

A no-brown, no-boil slow cooker recipe with sausage meatballs cooked in spaghetti sauce under a bed of cheese tortellini and a creamy parmesan topping.

7. Can I use other types of tortellini?  Absolutely! I love this with mushroom tortellini too! So long as it's FRESH, you can use any variety.

8. What type of spaghetti sauce do you like best?  I almost always use Prego (Traditional or Tomato Basil & Garlic) if I'm not using my homemade sauce recipe (which I keep stocked in the freezer).

9. Can I use marinara sauce?  Yes! But keep in mind that marinara sauce usually has a little less spices and salt so you may want to add both if using.

10. Can this be frozen?  I haven't tried it myself but I can't think of a reason it wouldn't freeze well.

11. Can this be made with ground beef instead of Italian sausage?  Yes, but you'll need to season it well (I'd use salt, pepper, oregano and garlic powder).

12.  Can I add peppers and onions?  Sounds good to me! I'd put them on top of the sauce while the meatballs cook.

LOVE THE NO-BOIL, NO-BROWN PART OF THIS RECIPE?

Me too! If this super easy method appeals to you, you HAVE GOT to make the No-Boil, No-Brown Italian Sausage & Pasta Bake! It's a LOT like this recipe but uses traditional dried pasta and bakes in the oven.

Prep time: 10 MinCook time: 4 HourTotal time: 4 H & 10 M

A no-brown, no-boil slow cooker recipe with sausage meatballs cooked in spaghetti sauce under a bed of cheese tortellini and a creamy parmesan topping.

Ingredients

  • 1.25 lbs Italian sausage links
  • 1 24-oz jar spaghetti sauce
  • 1 20-oz pack fresh cheese tortellini
  • 1 1/4 cups Half & Half
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2/3 cup grated parmesan cheese

Instructions

  1. Remove casings from sausage links then cut or pinch off pieces to roll into meatballs (4-5 meatballs from each individual link) then add to a large crock pot.
  2. Pour spaghetti sauce over sausage meatballs. Cover then cook on High 2-3 hours or Low 4-6 hours.
  3. Add tortellini in an even layer on top of sauce and meatballs then cover. Increase heat to High if not there already.
  4. Heat Half & Half in microwave for 2 minutes or until almost boiling. Stir in garlic powder and salt then pour over tortellini. Tortellini should be mostly submerged but if not, press them into the liquid a bit. It's OK if the tops are not completely covered. 1.25 c. Half & Half, 1/2 tsp garlic powder, 1/4 tsp salt
  5. Sprinkle grated parmesan over tortellini, cover with lid then cook on high 15-20 minutes or until tortellini is tender. 2/3 c. cheese
  6. Garnish with additional grated parmesan cheese and parsley if desired.

Notes

  • PRO TIP: Keep the empty sauce jar. The pasta will absorb the sauce the longer it sits (and may get a little dry). Add 1/2 cup HOT water and 2 tablespoons butter to the empty jar (which will have plenty of residual sauce in it), replace the lid then shake vigorously until the butter has melted and the mixture has emulsified, then stir into pasta if it has gone dry (or if you just like things a little saucy). This is also good to do if you have a lot left over and plan on refrigerating it.
  • You can use loose Italian sausage - the links are just really easy to roll into meatballs.
  • You can probably use whole milk or a combo of cream and skim milk in place of Half & Half (though I have not personally tested it).
  • Fresh tortellini is usually found near the prepackaged cheeses in grocery stores.
  • See FAQ above for more info, tips and suggestions.

BBQ Smoked Sausage & Rice

Home » Main Dishes » BBQ Smoked Sausage & Rice

A one-pan skillet meal with smoky sausage basted with sweet and tangy barbeque sauce over buttery, savory browned rice that cooks in just 30 minutes!

There are so many things I love about this recipe! I honestly don't even know where to start so I'll state the obvious first: it's quick and easy! This might become your new favorite weeknight meal!

Now let's talk about the texture! We're going to sauté the sausage first then baste it with BBQ sauce so it almost takes on a "burnt end" vibe. The texture of those sausage pieces with the soft (yet slightly chewy in the best way) rice is pure bliss for me!

The rice is almost the same as Mama's brown rice recipe (the buttery, beefy kind, not the healthy stuff) so it's already glorious but we're going to sneak in a few spices and a nip of BBQ sauce so it becomes the perfect partner for the sausage.

BBQ Smoked Sausage & Rice! A one-pan skillet meal with smoky sausage basted with sweet and tangy barbeque sauce over buttery, savory browned rice that's ready in just 30 minutes!

I like to make this for quick weeknight suppers but it's great at potlucks and cookouts too! Just spoon the rice into an aluminum pan then pile the sausage on top. It always gets eaten because everybody wants to try it!

Because smoked sausage reheats better than a lot of other types of meat, the leftovers are excellent too! Side note: I place a damp paper towel on top when reheating by the plate - it does wonders for the rice!

I've never tried to freeze this so I don't know how well it would do. If you try, please comment and let me know!

HOW TO MAKE BBQ SMOKED SAUSAGE & RICE

The full, printable recipe card is down below, but at a glance, this is all you'll need to do:

  1. Brown sausage then baste with BBQ sauce and set aside.
  2. Sauté onions and rice in butter then cook with beef consommé and seasonings.
  3. Add sausage back to the pan then serve!

6 FAQ ON BBQ SMOKED SAUSAGE & RICE

1. Can kielbasa or andouille be used?  Yes! Any cured, smoked sausage can be used.

2. What's your favorite sausage for this?  I always and only use regular (not all beef) Hillshire Farm Smoked Sausage. I find all-beef sausages (and bologna, hot dogs, etc.) to be a little tough and prefer the softer texture of traditional.

3. Can I add more BBQ sauce to the rice?  Yes and no. More sauce will make the rice a little sweet. If you're OK with that, then go for it! If you know your favorite brand of BBQ isn't as sweet as traditional, then definitely add more if you'd like!

BBQ Smoked Sausage & Rice! A one-pan skillet meal with smoky sausage basted with sweet and tangy barbeque sauce over buttery, savory browned rice that's ready in just 30 minutes!

4. What kind of BBQ sauce should be used?  Any traditional tomato-based or mustard-based barbeque sauce will be great in this! *Mustard-based BBQ sauce is traditional here in my neck of SC - I like both types in this recipe!

5. What brand of sauce is best?  I don't have a favorite but I used Sweet Baby Ray's regular sauce in the batch pictured here.

6. Why wait until the end to stir in the sausage?  To keep the pieces sauced! When we cook the sauce onto the sausage it gets a little sticky and is YUMMY! If we put the sausage in while the rice cooks, all the sauce will cook off and the texture of the meat will change a bit.

The BEST Flank Steak Pinwheels & Marinade

Thin flank steak strips marinated with simple pantry ingredients, rolled into pinwheels then cooked on the stove (or grill) that are incredibly tender and delicious, perfect for a main dish or entertaining!

Author: Mandy Rivers | Published: 5/7/26

We called this "poor man's filet mignon" when I was growing up. It was served both as a main dish and also passed around at parties as a hot appetizer. And it was ALWAYS the star of the show!

I was so used to the taste and texture of the marinated flank steak that when I got a little older and tasted actual filet mignon I was somewhat disappointed 😆

This marinade is perfect for ANY beef and I use it to marinate rump roasts and chuck steaks too. Not only is the flavor perfect (kinda reminds me of Dale's Seasoning marinade) but it tenderizes the beef without changing the texture like a lot of marinades do.

The BEST Flank Steak Pinwheels & Marinade! Thin flank steak strips marinated in a simple sauce made with pantry ingredients, rolled into pinwheels then cooked on the stove (or grill) that are incredibly tender and delicious, perfect for a main dish or entertaining!

I cook whole flank steak a lot for Steak Fajita Pasta (and use the same recipe to make burrito bowls and tacos) and had one sitting in the fridge for that purpose when I saw a video on TikTok for something verrrrry similar to the steak pinwheels I grew up with!

I hadn't thought about steak pinwheels in forever so I knew I had to make them!

I pulled out The Family Bible (mama's old cookbook with all the "keepers" in it that dates back to the 1960's) and found her marinade recipe. As soon as I mixed it up and got a good smell of it, my mouth started watering because it knew what was coming!

FAQ ON FLANK STEAK PINWHEELS

1. Don't you have to marinate them for at least 24 hours?  Nope. I almost always marinate mine 12-18 hours. I either get it going first thing in the morning or right before I go to bed at night. 12 hours is PLENTY of time for the marinade to work its magic.

2. Can I marinate the steaks longer than 24 hours?  I've seen similar recipes that say 24-48 hours so I suppose you can but I personally don't recommend going longer than 24 hours. The acid in the marinade will start to break down the proteins in the steak and compromise the texture.

3. Is it OK to use low-sodium soy sauce?  Of course! But I would suggest seasoning with a little salt just before cooking.

4. Can I use a skirt steak instead of flank steak?  Technically yes but skirt steak is much thinner so it will be hard to roll the strips into pinwheels (and the grain goes the other way so take note of it if using).

5. What can I substitute for the worcestershire sauce?  I think worcestershire sauce is KEY in this marinade but you can substitute with another mild source of acid like apple cider vinegar or balsamic (but reduce the amount to 2 tablespoons as vinegar is more acidic).

6. Is there a substitute for the honey?  Yes! Maple syrup or brown sugar can be used as well (but I like honey best!).

7. Can these be cooked on a grill?  Absolutely!! It would be almost impossible for me to tell you how long to cook them because temperatures range SO MUCH for grills but just cook them the same way you would could any steak of the same thickness.

THREE IMPORTANT COOKING NOTES

  1. The acid in the marinade will react with the steak and make it appear more well done than it is. This is great for me because some of my crew prefer medium-well to well-done steaks (and they are none the wiser when I cook them a little less).
  2. All stoves and pans cook differently. 4 minutes on each side in my cast iron pan heated over medium-high on a gas stove yields MEDIUM cooked steaks. You may have to adjust the heat or cooking time to accomplish the finish that you desire.
  3. The honey in the marinade can burn if cooked too high for too long. I would normally cook a steak in my cast iron skillet at the highest temperature possible but you can't do that with this marinade without burning the steak.

COOKING GUIDE FOR INTERNAL TEMPERATURES

Because all stoves and pans cook differently, cook a few test pieces to be sure which temperature and cooking times get you where you want to be (note that the pinwheels will continue to cook as they rest once removed from the pan).

RARE or MEDIUM-RARE - Cook over medium-high heat 2-3 minutes on each side. Just remember you won't see as much pink as you're used to because of the acid in the marinade.

MEDIUM - Follow the recipe (4-5 minutes on each side over medium-high heat).

MEDIUM-WELL - Follow the recipe AND ALSO turn the pinwheels onto their sides and cook an additional 1-2 minutes total.

WELL-DONE - Cook 5 minutes over medium-high heat then reduce the heat to medium before flipping. Once flipped, cook, covered, an additional 5-7 minutes.

HOW TO SERVE FLANK STEAK PINWHEELS

  • As an entree just as you would serve any steak (4 per person is a good average - some will eat more and some will eat less but it usually averages out to about 4 per person).
  • These are amazing as an appetizer. They are still delicious at room temperature if you're entertaining.
  • Overtop a green salad. I especially like these with mixed greens, diced apples, red onions, bleu cheese and either a balsamic vinaigrette or bleu cheese dressing.
  • These go great in a big roll as a sandwich. I like to toast a crusty sub roll then slather on mayo and horseradish and top it all with shredded lettuce.

  • 1/2 cup soy sauce
  • 1/3 cup vegetable oil
  • 3 tablespoons worcestershire sauce
  • 2 tablespoons honey
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

Instructions

  1. Cut flank steak into thin strips, cutting against the grain. Aim for strips a little thinner than 1/2-inch thick. Add steak strips to a gallon-sized zip-top bag.
  2. Make the marinade: Combine remaining ingredients then whisk vigorously until the oil is well incorporated. Pour marinade into bag with steak strips then massage it a bit to ensure the marinade thoroughly coats the steak strips.
  3. Refrigerate 12-24 hours, flipping the bag occasionally to ensure all of the steak strips are evenly marinated.
  4. Drain marinade. Working one at a time, lay each steak strip flat on a clean surface with the wider side facing up. Roll each strip into a pinwheel then secure with a toothpick. Place pinwheels on 2-3 layers of paper towels to absorb any extra marinade (excess liquid will prevent the steaks from browning properly).
  5. Heat a large skillet over medium-high heat then add enough oil to coat the bottom of the pan. Working in 2-3 batches, cook pinwheels 4-5 minutes on each side (for medium) then remove to a serving plate.
  6. Cover loosely with aluminum foil then let steaks rest 5 minutes before serving.

Notes

  • The steak MUST marinate at least 12 hours.
  • Brown sugar can be substituted for the honey.
  • If omitting the worcestershire sauce, add 2 tablespoons of any mild vinegar (apple cider, rice wine, balsamic, etc.) to replace the acid from the worcestershire.
  • Medium steaks will appear more medium-well because of the marinade.
  • Use SMOKED paprika if you have it as it will add a "grilled" taste to the marinade. Liquid Smoke could be used as well.
  • Read the article above for FAQ, internal temperature cooking guide and other important notes.
