Drunken Chicken with 40’leven Cloves of Garlic

Beer brined chicken marinated with whole garlic cloves and simple spices roasted for a super juicy chicken recipe with incredible flavor that’s seasoned from the inside out!

Have you heard of recipe Chicken with 40 Cloves of Garlic? This recipe is a combination of that one and Drunken Chicken.

You marinate the chicken in a beer brine with an entire bulb of garlic and the result is super juicy chicken with incredible flavor that’s seasoned from the inside out!

Since I didn’t actually use 40 cloves of garlic (I used one whole bulb which yielded about 12-14 cloves) I’m using the Southern euphemism “40-leven” which is our universal term for “a whole lot” of something.

WHAT DOES IT TASTE LIKE? BEER??

Don’t worry, the chicken doesn’t taste like beer. Well, not like what you’d think anyway. You don’t take a bite and think, Well hello, it's Miller time!!

What you get is a hint of sweetness with an almost nutty undertone from the beer. The salt infuses the flavors of the garlic and spices into the chicken and helps it retain moisture throughout the cooking process.

You could totally grill this but when you cook it like this, you cook the garlic too which yields these golden little gems of roasted garlic that you scan schmear on a nice hunk of crusty bread or do like I did and toss it with some roasted cauliflower.

About the photos... these aren’t the best. I let the chicken sit out too long before I photographed it (long story!) so this almost looks a little dry. Trust me, it’s not! Even after this sat out, got covered in foil, sat out some more while I roasted some cauliflower then got put back in the oven to reheat, it was still insanely moist and juicy and delicious and I already want more!

Of course, if I were like one of the new wave of food bloggers (who heard there was money to be made at this and jumped on the wagon), I would just buy random photos and pretend they go with my recipe. Or hire a professional food photographer.

I could have sprayed it with WD-40 or hairspray but we actually eat the food I share with you here. I’m just a regular mom with a regular job taking regular pictures of my regular supper right before we actually sit down and eat it.

NOTES ABOUT COOKING DRUNKEN CHICKEN WITH 40'LEVEN CLOVES OF GARLIC

  • Use any beer you like. I’d recommend a brown ale or lager and would probably steer away from IPAs or other super-hoppy beer.
  • You can absolutely grill this! You’ll lose the roasted garlic (though I suppose you could wrap it up in foil and cook it on the grill too – if you try that, let me know how it turns out!).
  • This recipe will not work with boneless, skinless chicken.
  • I don’t recommend using chicken breasts. If you try it anyway, don’t yell at me if your chicken is dry.

Beer brined chicken marinated with whole garlic cloves and simple spices oven-roasted for super juicy chicken with incredible flavor that’s seasoned from the inside out!

Ingredients

  • 8 bone-in, skin-on chicken thighs and/or legs
  • 1 12-oz beer
  • 1 whole bulb of garlic
  • 1 onion, peeled and quartered
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Separate garlic cloves from bulb then slightly pop open each clove by laying your knife over the clove and gently pounding with the heel of your hand. Remove the papery skin. You just want to open each clove up a little to release the flavor.
  2. Combine beer, garlic cloves, onion pieces, salt, pepper, garlic powder, paprika and red pepper in a gallon-sized zip-top bag or large dish then shake/stir until the salt is dissolved. Add chicken, seal or cover, then refrigerate overnight (or at least 12 hours).
  3. Preheat oven to 350 degrees.
  4. Drain chicken well, reserving garlic cloves. Heat a large cast iron skillet over medium heat (or any oven-safe skillet). Add just enough vegetable oil to skillet to coat the bottom. Once oil and pan are plenty hot, add chicken pieces, skin-side down. Cook chicken until nicely browned.
  5. Flip chicken (so skin-side is up) and place reserved garlic cloves around chicken. Place skillet in the oven and bake at 350 degrees for 40-50 minutes or until deep golden brown.
  6. Remove skillet from oven and cover loosely with aluminum foil. Rest dish for 15 minutes then serve. Don’t throw out the garlic! You can eat it, spread on bread or mix with roasted vegetables.
  7. Alternate Preparation: If you don’t have a cast iron skillet or a frying pan big enough to fit all the chicken pieces, don’t worry! Just brown the chicken in batches in any sturdy skillet. Spoon the pan drippings into a 13x9 baking dish then transfer chicken and garlic to dish then bake per recipe.

Notes

If y’all follow me on Instagram you might have caught this already but ol’ Brutus made the all-star baseball team! We’re crazy excited!

We’ve been practicing like mad so it’s been hard to eat good home-cooked meals and make new stuff for the blog.

Since we’re practically living at the ball field now I decided to take the blog to practice :)

We have a really nice ball park which has a huge grill for members. I suggested we have a cookout and everyone pitched in to bring stuff.

Side note: you know you're in the South when the baseball park has a barbeque grill big enough to cook a hog on.

I’d concocted this marinade for chicken a month or so ago and we just fell in love with it so I figured it would be great if we marinated chicken thighs in it, grilled them up and made super simple chicken sandwiches. And that’s exactly what we did!

I like using thighs over breasts because you just about can’t overcook them. They stay moist and juicy and have so much more flavor. But since I know somebody’s going to ask anyway, yes, you can use breasts.

They just won’t be as good.

Hmmph.

You can serve the grilled chicken as-is or make sandwiches. I think this is a great alternative to grilling burgers and hotdogs if you have a crowd to feed. The way we served these was just on a simple buttered bun with a drizzle of Cajun White Barbeque Sauce (recipe below).

I like a few slices of dill pickle on the bottom too but other than that, I don't serve anything extra with the sandwiches. It's like eating a Chick-fil-A sandwich - simple bet perfectly delicious!

And unlike with burgers you don't need to buy and prep a wagon-load of condiments and extras like lettuce, tomatoes, onions, cheese, mayo, mustard, ketchup, etc.

I got distracted and didn’t take a photo of this as a sandwich OR with the Cajun White Barbeque Sauce on top but these photos will show you what the chicken looked like when it came off the grill.

And I’d like to go on the record and tell you our third baseman, Cat Daddy, ate two of these and told me they were “seriously really delicious good!”

That’s a pretty heavy compliment coming from an 8-year old ;)

Ingredients

Chicken & Marinade
  • 8-10 boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup worcestershire sauce
  • 1/2 cup dijon mustard
  • 1/4 cup brown sugar
  • 3 tablespoons vegetable oil
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
Cajun White Barbeque Sauce
  • 1 1/2 cups mayonnaise
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper

Instructions

Chicken & Marinade
  1. Trim any excess fat from chicken then add to a gallon-sized zip-top back or lidded container.
  2. Combine remaining ingredients then mix well to make a marinade. Pour marinade over chicken. Seal bag then refrigerate 6-8 hours or overnight.
  3. Drain marinade and discard. Grill chicken over medium heat for 20-30 minutes or until cooked through.
  4. Serve as-is or on buttered buns with Cajun White Barbeque Sauce.
Cajun White Barbeque Sauce
  1. Combine all ingredients then refrigerate until ready to serve. Refrigerate to store up to 2 weeks.

Notes

You can use chicken breasts but they won't be as juicy and tender as thighs.

Buffalo Feathers - Chicken Tenders with Wing Sauce

Grilled chicken tenderloins sauced like wings for all the fun and flavor of buffalo wings with half the work, fat and calories! 

So we bought a new grill. Finally. And because I've been without one for so long (and because I know in a month or two it will be too hot to even LOOK at a grill) I've been grilling like a mad woman!

Seriously. It’s almost ridiculous. Deciding which vegetables to buy at the market comes down to one very simple question: can I grill it? The menu for the entire week will revolve around the grill.

I've been keeping chicken tenderloins on-hand to throw on there too because they’re quick and easy for the kids. If I’m grilling something for Husband and myself that I don’t think the onions will necessarily love (or appreciate), I’ll just throw some tenderloins on there for them and everybody’s happy! Because um… I don’t know about y’all but buying an 8-year old a 2-inch thick ribeye ain't really how I roll.

So anyway, I found a big family pack of tenders on sale and grabbed them up! Then I was wondering what in the world to do with that many because I’d never really thought of grilling chicken tenderloins by themselves. Like, just tenders with nothing else. And then I remembered the “buffalo feathers” at Wild Wing Café. They cook chicken tenderloins then sauce them like chicken wings and instead of calling them buffalo wings, they call them buffalo feathers. Ya know, because they’re kinda shaped like feathers?

Yes, I know buffalo don’t have feathers. You know what else they don’t have? Wings.

My usual wing sauce is basically equal parts hot sauce, soy sauce and brown sugar but I wanted to make these a little more like “buffalo wings”. Typical buffalo wing sauce is mostly equal parts melted butter and hot sauce. I sort of combined these two concepts and came up with the recipe below.

And I LOVED IT!! There’s just enough brown sugar in there to balance the acidic pepper sauce without being cloyingly sweet and the soy sauce gives it another layer of flavor. I think I might have found my new favorite wing sauce recipe! FOR REAL! So good!

I wouldn't consider these very spicy. My kids ate them without batting an eye. If I had to rate the heat, I’d say these were a 6 out of 10 on the spiciness scale.

I served these with the typical accoutrement of celery and bleu cheese dressing but also served cool, crisp simple wedge salads with bleu cheese dressing and it was just so perfectly perfect with the chicken! I can’t wait to make this meal again!

Hmmm… I wonder if Bi-Lo is still having that sale…

Grilled chicken tenderloins sauced like wings for all the fun and flavor of buffalo wings with half the work, fat and calories! 

Ingredients

  • 2 pounds chicken tenderloins
  • Pinch of salt
  • 1 cup hot sauce
  • 1 cup (2 sticks) butter, melted
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder

Instructions

  1. Combine hot sauce, butter, brown sugar, soy sauce and garlic in a small bowl then mix well to make the marinade and basting sauce.
  2. Combine 1/2 cup sauce, salt and chicken tenderloins in a bowl. Using your hands or a rubber spatula, gently mix until tenderloins are coated with sauce. Cover and refrigerate for 2-4 hours. Set remaining sauce aside, at room temperature, to baste the chicken with later.
  3. Grill chicken over medium-high heat, uncovered, until cooked through (it doesn't take long - don't overcook them!), basting 2-3 times on each side with remaining sauce. For saucier “feathers” toss with remaining sauce before serving.

Notes

  • The melted butter will solidify a little when it hits the cold chicken and more so when it gets refrigerated while it's marinating. That is A-OK.
  • You can also pan-fry these in a little vegetable oil then toss them in the sauce to serve.
  • There are just too many variables when grilling to tell you how long to cook yours. I can tell you I cooked mine about 5 minutes on each side (on an open grill). The most important thing is to NOT overcook them. Because they’re somewhat opaque, it’s easy to tell how they’re cooking.
  • I think it would be awesome to make a boat load of these and baste/serve them with various wing sauces like barbeque and teriyaki!
  • I always always ALWAYS use Texas Pete Hot Sauce but if you can't get it where you live, try Cholula or Frank's RedHot.
  • Use regular hot sauce. Not hot wing sauce or buffalo wing sauce or tabasco sauce. Just plain hot sauce.

Southern-Style Baked Beans with Bacon

A classic Southern-style baked beans recipe made with brown sugar topped with crispy bacon.

You know how you lay slices of bacon on top of baked beans and they cook up all glorious? Except that they shrink up so much that when the beans are done only the center of your dish has bacon? And you’ll have like 5 slices but it’s impossible to cut them with the serving spoon so only 5 people actually get the bacon.

And the other people are walking around mumbling under their breath like, That heifer just had to get that last slice of bacon.

There are recipes that call for cooking the bacon first and crumbling it on top. But, as I've said many, many times around here, ain't nobody got time for that. So here’s what I do! I mix up my very favorite baked beans then top them with a gozillion nuggets of bacon that crisp up and work their magic while the beans are cooking. End result? Bacon for everyone!

HOW TO COOK SOUTHERN-STYLE BAKED BEANS

  • Mix together ketchup, barbeque sauce, brown sugar, mustard, worcestershire sauce, Liquid Smoke, garlic and pepper then set aside.
  • Open each can of beans then pour off all the standing liquid in the top of the can then gently stir beans into the ketchup mixture. Pour into a shallow baking dish.
  • Cut bacon into 1/2 inch pieces then place pieces evenly in a single layer on top of bean.
  • Bake beans, uncovered, at 350 degrees for 1 to 1.5 hours or until bacon is cooked through and starting to crisp. 

NOTES ABOUT MAKING SOUTHERN-STYLE BAKED BEANS

  • In the recipe card, you’ll notice I call for canned “plain pork and beans”. What I mean by that is we just want plain jane pork and beans, not “baked beans” or “barbeque beans” or anything fancy like that as they’re already jazzed up. I usually buy Van Camp’s or Libby’s.
  • We’re going to pour off the standing liquid in the cans to ensure our beans are rich and thick. Be sure to keep the cans upright until you’re ready to cook. You want all the liquid to settle on top so you can pour it off easily.
  • Once the bacon is cut into small pieces, I like to kinda crumple each piece a bit when topping the beans instead of laying the bacon pieces flat over the beans – like little inchworms (the cute ride-on toys from the 80’s not actual worms). This is totally optional but it makes the finished dish look extra gorgeous!

Southern-Style Baked Beans with Bacon

  • 2 28-oz. cans plain pork n’ beans
  • 1/2 cup ketchup
  • 1/2 cup barbeque sauce
  • 1/4 cup brown sugar
  • 1 tablespoon yellow mustard
  • 1 tablespoon worcestershire sauce
  • A few drops Liquid Smoke (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 5-6 slices thick, center-cut bacon

Instructions

  1. Combine ketchup, barbeque sauce, brown sugar, mustard, worcestershire sauce, Liquid Smoke, garlic and pepper in a medium-sized bowl then mix well; set aside.
  2. Open each can of beans and pour off all the standing liquid in the top of the can. Discard liquid then add beans to the ketchup mixture. Mix beans gently with the ketchup mixture until thoroughly combined then pour into a shallow 2-quart baking dish.
  3. Cut bacon into 1/2 inch pieces then place pieces evenly in a single layer on top of beans. I like to kinda crumple each piece a bit instead of laying them flat – like little inchworms (the cute ride-on toys from the 80’s not actual worms).
  4. Bake beans, uncovered, at 350 degrees for 1 to 1.5 hours or until bacon is cooked through and starting to crisp.

Notes

Sometimes I look back on my adventure with Food Network and I think did that really happen to me? Did I really get to be a cast member on America’s Best Cook? Did I really get to work with chefs I've admired for years and years? Like Michael Symon and Alex Guarnaschelli and Cat Cora?

Cat-frickin-Cora, man. I mean, come on?!  Did that happen to me?

And her telling me my food was cooked perfectly; that it was delicious. And that she’d love to spend a day in my kitchen cooking with me. Did that happen?

Anywho, I’d been wanting to cook the shrimp I made for Cat again so when I saw gulf shrimp at the market yesterday I pounced on them.

And I didn't have to rip the heads off and clean these with the clock ticking down either, thankyouverymuch Food Network.

I decided to make these into an appetizer since I was really just cooking them for fun. I whipped them up, poured myself a beer and let myself take a stroll back down memory lane.

These are super easy and delicious! It only takes a minute or two to assemble the tostadas once you have the shrimp cooked. These would make a beautiful appetizer at any event or party. I can’t wait to make these for football season!

Minus the marinade time, I can assure you this can be made in under 30 minutes because I've done it.

Chipotle Shrimp Tostada Bites

Chipotle Shrimp Tostada Bites

A super fun and easy appetizer recipe made with tortilla chips, chipotle glazed shrimp and guacamole sprinkled with a confetti of red onion and cilantro.

Ingredients

  • 1 1/2 pounds medium shrimp
  • 1 7-oz. can chipotle peppers in adobo sauce
  • 1 tablespoon minced garlic
  • 1/4 cup brown sugar
  • Juice of one lime
  • 1 8-oz. package prepared guacamole
  • 1 bag bite-sized round tortilla chips
  • Chopped cilantro
  • Finely diced red onion
  • Coarse-grain sea salt or kosher salt

Instructions

  1. Peel and de-vein shrimp; set aside.
  2. Combine chipotle peppers in adobo sauce, garlic, brown sugar and lime juice in a large bowl and mix well. If you want yours spicy, chop open the peppers to release the seeds, if not, leave them whole. Add shrimp and gently stir to combine ingredients. Cover bowl and refrigerate shrimp for 4 hours to marinate.
  3. Cook shrimp on the grill, in a grill pan or in a large skillet (grease whichever you use with oil or cooking spray) over medium-high heat 2-3 minutes on each side or until shrimp are cooked through. If cooking in a pan or skillet, cook in several batches to ensure the shrimp aren't overcrowded. Set cooked shrimp aside until ready to serve. The tostadas are perfectly delicious served at room temperature so feel free to prepare the shrimp ahead of time.
  4. To assemble, spread a dollop of guacamole onto each tortilla chip (about a teaspoon). Place one shrimp on top of guacamole then arrange tostadas on a serving platter or cutting board. Sprinkle tostadas with cilantro, diced red onion and sea salt. Serve within one hour of assembling.

Notes

  • Feel free to make your own guacamole or make my Semi-Homemade Party Guacamole but seriously, I think the prepared kind is perfect for this!
  • You might want to buy two bags of chips or get the family-size in case there are lots of broken chips (you just never know, ya know?).
