Here in South Carolina, we have a restaurant called California Dreaming (well there's one in GA and AL but the majority are in SC). And if you've been there, you already know what I'm fixing to say...

They are famous for their house salad! It is served as an entree salad with ham and turkey or as a side salad without. Everyone who goes there orders this salad! And most folks have it with their house dressing which is a warm bacon vinaigrette.

The best part is the salad is served with a fresh croissant that's drizzled with honey and butter and my mouth is watering just thinking about it!

I'm calling my version Carolina Dreaming Salad. Pretty please, don't roll your eyes 🙈 I really debated over the name and don't want to seem silly, but settled on it for a two reasons...

  1. The first is that this is 100% a South Carolina thing. I don't know how we ended up with a restaurant with a west coast name but it's been here as long as I can remember and their menu is definitely Southern-inspired. 
  2. The second reason is I'm using my own warm bacon salad dressing (not trying to recreate theirs), though I think it's a dead-ringer on taste. 

A special note to everyone in NC and SC: As a life-long SC resident, I know how annoying it is when something gets coined "Carolina" because we are two gloriously distinguishable states who don't like getting lumped together but 'South Carolina Dreaming Salad' is just too much of a mouthful!

WHAT IS WARM BACON DRESSING?

Very popular in the South, warm bacon dressing is a slightly sweet vinaigrette made with warm bacon drippings instead of salad oil (olive oil, canola, etc.). It is typically made with a milder vinegar like apple cider vinegar or red wine vinegar then sweetened with sugar or honey. The addition of dijon mustard naturally emulsifies the ingredients into a more homogenized dressing. It is often served over spinach salad and commonly paired with salads that feature boiled eggs.

WHAT'S DIFFERENT ABOUT THIS SALAD AND THE ORIGINAL?

Dressing - Copycat recipes online vary GREATLY (some are downright laughable). I don't know the actual recipe for the original but mine tastes exactly the same to me! 

Red Onions - Both my salad and dressing have red onions and the California Dreaming version doesn't (though I'd venture to guess their dressing has some shallots sweated in there somewhere). 

Cheese - The California Dreaming salad uses both cheddar and monterey jack cheeses. I use colby jack to get the best of both worlds.  

Ham & Turkey - Though the side salad has neither, the California Dreaming entree salad has both.

NOTES ON INGREDIENTS & SUBSTITUTIONS

  • Bacon - Use whichever (center-cut, thick-sliced, regular, etc.) but if using center cut or something that looks particularly lean, consider using 10 slices to ensure there are enough bacon drippings for the dressing. 
  • Red Onions - Regular white or yellow onions can be substituted but I really like the bite and color from the red onions in this.
  • Lettuce - Use 1 whole head of romaine. If using the "hearts of romaine" that come in the 3-pack, you will likely need all three. You can use whichever lettuce or greens you enjoy best! You just need about 8-10 cups.
  • Tomatoes - I usually use grape tomatoes when I make this because they're my favorite for salads but use what you like!
  • Almonds - The original salad has almond slivers but sliced almonds or any type of nuts work! Pecans are divine! You don't have to toast the nuts but they're so much better if you do!
  • Cheese - Use your favorite. Any semi-hard cheese (cheddar, swiss, colby, monterey jack, etc.) works! Sharp cheddar is great in this!
  • Optional - add shaved deli turkey and ham to amp up the protein if serving this as an entree salad!

7 FAQ ON THE SALAD AND DRESSING

  1. Do I have to use apple cider vinegar?  I think it's best but red wine vinegar is a great alternative because it is a milder vinegar too. If using plain white vinegar, dilute it with 1 tablespoon of water.
  2. Can I use less sugar?  Yes! The dressing this recipe is based on is definitely on the sweet side (think honey mustard) and I think it's perfect but you can reduce to 1/4 cup if you'd like. 
  3. What can I use besides Dijon mustard?  The Dijon adds flavor but it also helps to emulsify the dressing. If you're dead-set against it, use mayo plus a pinch of dry mustard powder and a dash of Worcestershire. 
  4. Can I add other vegetables to the salad?  Heck yeah! You do you, girl! Cucumbers are great in this!
  5. What if I really hate onions?  You can leave them out but consider adding a pinch of red pepper flakes to the dressing.
  6. Can I substitute ______ for ______ in the salad?  See section above.
  7. How many entree salads will this recipe make?  You can serve 4 entree-size salads with this sharable size recipe. Add shaved deli ham and turkey if you'd like!

SERVING SUGGESTIONS

With Soup - Folks often pair this salad with potato soup at the restaurant. Here's my favorite potato soup recipe (and it has bacon in it too!)

Sally & Sammy* - Serve the salad ("sally") with a sandwich ("sammy") as a cool meal that's perfect for summertime!

Brunch - This type of salad is often served for brunch because of the ample amount of bacon and eggs.

Cobb-Style - Assemble the salad with the components on top of the greens in definable rows. This is great for buffets so folks can avoid any ingredients they don't care for.

Potlucks - Bring along to potlucks and cookouts - assemble the salad in a 13x9 pan then add the dressing just before serving (bring in a lidded jar).

Entree Salad - Serve as an entree salad. Consider adding shaved deli ham and turkey for more protein (recipe makes 4 entree-size salads).

*this is the corny phrase I used when the kids were little to try to get them excited about eating salad and sammiches for a quick supper.

Ingredients

Salad
  • 8 slices bacon
  • 1/2 medium red onion
  • 1 whole head of romaine lettuce, shredded
  • 1 cup chopped tomatoes
  • 1 cup slivered almonds
  • 6 oz colby jack cheese, shredded
  • 6 boiled eggs, chopped
Dressing
  • 2/3 cup apple cider vinegar
  • 1/3 cup sugar
  • 1.5 tablespoons Dijon mustard
  • 1.5 teaspoons salt
  • 1/2 cup reserved bacon drippings (approx.)
  • 1/4 cup finely diced red onion

Instructions

Salad
  1. Optional: toast the almonds in the skillet before cooking the bacon. Just put them in the pan dry then heat over medium-high heat until fragrant and starting to brown.
  2. Cut bacon into 1/2" pieces then brown in a large skillet until crispy and golden brown. Using a slotted spoon, remove bacon from drippings to a plate lined with paper towels. Turn off heat and leave the drippings in the pan. 8 slices bacon
  3. Finely dice onion then set aside 1/4 cup to be used in the dressing. 1/2 red onion
  4. Arrange lettuce on a serving platter or 13x9 pan then top with tomatoes, remaining onions, almonds, eggs, cheese and cooked bacon. 1 head romaine, 1 c. each tomatoes and almonds, 6 eggs, 6-oz cheese
  5. When ready to serve, drizzle half of the dressing over salad then serve the remaining dressing on the side.
Dressing
  1. Combine vinegar, sugar, mustard and salt in a small mixing bowl then stir until sugar is dissolved. 2/3 c. vinegar, 1/3 c. sugar, 1.5 Tbsp dijon, 1.5 tsp salt
  2. Heat skillet with bacon drippings then add red onions. Cook over medium-high heat 3-4 minutes or until onions are soft. Approx 1/2 c. bacon drippings, 1/4 c. onions
  3. Pour vinegar mixture into hot skillet. Bring to a boil then remove from heat. Add dressing back to mixing bowl then whisk vigorously until emulsified.
  4. Refrigerate dressing to store (up to 4 weeks). Reheat and whisk well before serving.

Notes

  • If using center cut or extra lean bacon, consider using 10 slices to ensure there are enough drippings to make the dressing (we need about 1/2 cup).
  • If you're unsure about the amount of bacon drippings, feel free to measure. A little more or less is fine. If needed, add a neutral oil.
  • The dressing works great with monk fruit, Splenda, honey or maple syrup instead of sugar. 
  • 6 ounces cheese yields about 3 cups shredded. Feel free to use more!

I love to make this cheesy broccoli rice as a side dish for supper but what I REALLY LOVE is having the leftovers later in the week!

This heats up perfectly for lunches and makes a great meatless meal.

Also, this is 100% homemade with no canned soups, no packaged ingredients AND it uses fresh broccoli!

Since broccoli is my favorite green vegetable and rice is my favorite starch, this recipe is a win/win for me!

You can add diced carrots or sliced mushrooms when sautéing the onions and really make this your own.

I imagine you could mix in chopped, cooked chicken too!

SUGGESTIONS & TIPS

  • I especially like this with American cheese. It melts SO WELL! Just cut or tear the slices into strips - they will melt like a dream.
  • You can use almost any cheese that melts well - cheddar, American, Colby, Monterrey jack, etc. 
  • Bullion can be used instead of broth but you may need to reduce the salt since bullion is saltier than broth.
  • Add onion powder for a little extra flavor.
  • Add a splash of milk when you stir in the cheese to make the rice creamy.

A simple homemade recipe with fresh broccoli, savory rice and creamy cheddar cheese perfect for a side dish or meatless main.

Ingredients

  • 1 head fresh broccoli
  • 1 medium onion, chopped
  • 1/4 cup butter
  • 1 tablespoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup extra long-grain rice
  • 2 cups chicken or vegetable broth
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese

Instructions

  1. Sauté onions in butter 2-3 minutes in a large skillet or wide saucepan (something wide with a fitted lid). 1 onion, 1/2 stick butter
  2. Meanwhile, cut 2 cups of broccoli florets from the fresh broccoli then set aside.
  3. Chop the remaining broccoli into pieces about 1/2-inch in size then add to skillet with onions.
  4. Add garlic, salt, mustard powder, pepper, cayenne and rice then continue cooking and stirring 3-5 minutes or until rice starts to brown. 1 Tbsp garlic, 1/2 tsp each salt, mustard powder and pepper, 1/4 tsp cayenne, 1 cup rice
  5. Add broth and milk then bring to a boil, stirring occasionally with a fork. Once boiling, reduce heat to low (or wherever gets you a gentle boil) then cook, covered for 10 minutes. 2 c. broth, 1/2 c. milk
  6. Stir with a fork, scraping the bottom of the pan, then add reserved broccoli florets on top of rice. Cover immediately then continue cooking 10 minutes or until rice is tender.
  7. Stir in cheese then serve. 2 c. cheese

Notes

  • 1 standard sized head of broccoli yields about 2 cups florets and 2-3 cups chopped broccoli.
  • I haven't made this with frozen broccoli but I imagine it would work fine! I would thaw then add on top of the rice in Step 6.

If you've been with me for a while, you know how much I love rice and how often I cook it! I will choose rice over pasta or potatoes 9 out of 10 times. Especially for side dishes!

I've been making this recipe (or various versions of it) for decades and it only just occurred to me to share it with you.

You see, the same way I can't not cook rice when I have pan drippings from any roasted meat, it's the first thing I think of when I have a few random veggies floating around that need to get eaten too.

I HATE wasting food. When I'm glancing in the fridge and pantry before making my weekly grocery list, there are always a handful of fresh vegetables sitting around that didn't get eaten.

A few stalks of celery, half a bag of carrots that have seen better days, that third bell pepper from the 3-pack that didn't get used... I'm sure your kitchen is the same.

A lot of folks will dice and freeze them (and sometimes I do too if they'll work in a stock) but most fresh vegetables are never the same after being frozen. The water in them expands when frozen, bursting the cells so they lose their structure and a ton of flavor.

So when I realized I had three of my favorite vegetables for this rice sitting in the fridge doing nothing but threatening to go bad, I decided to whip up a pot so I could share it with you.

This is my go-to when I have an "easy meat" for supper like grilled steak, baked fish or pork chops, shake-n-bake chicken, etc.

You can use just about any vegetable and/or herbs you'd like in this and can steer it in any flavor direction with herbs and spices.

7 TIPS & SUGGESTIONS FOR VEGETABLE & HERB RICE

  1. You can totally customize this recipe and use your favorite veggies - just aim for about 3-4 cups vegetables for this much rice.
  2. If you're using leftover vegetables that have already been cooked (corn, butterbeans, peas, etc.) just drain then add them with the broth. 
  3. Most fresh vegetables will be sauteed in Step 1 (mushrooms, onions, shallots, bell pepper, celery, carrots, etc.)
  4. Cruciferous vegetables like broccoli and cauliflower are best when chopped then stirred in halfway through cooking the rice (after 10 minutes).
  5. You can use vegetable, chicken or beef broth (whatever you like!).
  6. Fresh cilantro, thyme and tarragon are great in this too!
  7. Bullion can be substituted for broth BUT reduce salt to 1/2 teaspoon as bullion is typically saltier than broth.

  • 1 cup diced red bell pepper
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 medium onion, diced
  • 6 tablespoons butter
  • 1 tablespoon minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 1/2 cups extra long-grain rice
  • 3 1/4 cups vegetable broth (or chicken)
  • 1/3 cup minced fresh parsley

Instructions

  1. Sauté vegetables in butter 5 minutes in a large skillet or wide saucepan (something wide with a fitted lid).
  2. Add garlic, thyme, Italian seasoning, salt and rice then continue cooking and stirring 3-5 minutes or until rice just starts to brown.
  3. Add broth then bring to a boil, stirring occasionally with a fork. Once boiling, reduce heat to low (or wherever gets you a gentle boil) then cook, covered for 20 minutes or until rice is tender.
  4. Stir with a fork 2-3 times the first 15 minutes of cooking, scraping the bottom of the pan, then don't open the lid or stir at all the last 5 minutes of cooking.
  5. Stir in fresh parsley then serve.

Notes

  • Use most any combination of vegetables so long as you have approximately 3-4 cups.
  • Use your favorite herbs and spices. 
  • If the lid doesn't have a tight fit and a lot of steam is escaping as the rice cooks, you may need to add 1/4 cup of water after 15 minutes. You want to see a little liquid on top of the rice before the last 5 minutes of undisturbed cooking.

Mushroom Casserole

The first time I made this casserole, I could not stop eating it. Literally. Any self control I had flew out the back door and I hovered over the dish like Quasimodo. I burned my tongue and my hand and neither affliction slowed me down.

Am I proud of eating 1/2 pound of casserole in the middle of a Monday afternoon? No.

Am I borderline hysterical with excitement about the recipe? YES, BY GOD, I AM!

A month or so ago I asked readers in my weekly(ish) newsletter what side dishes they typically prepare for Easter Dinner because I was looking for some new recipes to try.

And my friends did not disappoint! Dorie D. told me about her recipe for Mushroom Casserole then sent it to me when I asked about it! As soon as I glanced at the recipe, I knew I had to try it because A) I LOVE MUSHROOMS and B) I could tell it would be delicious!

The mushroom caps go in whole but the stems get sauteed with onions and butter (are you drooling?) and the whole thing sets on a bed of seasoned croutons that soak up all the buttery goodness. AND THEN the whole thing gets topped with cream of mushroom soup, parmesan cheese and a buttery breadcrumb topping.

While I was waiting for Dorie to respond to my request for her to share her recipe, I hopped online to see if I could find some other recipes that sounded like hers.

THERE ARE NONE! Well, there is now (holla!)

There are lots of casseroles with mushrooms in them but only a few wherein mushrooms are the main ingredient. And those that did had everything in them from cottage cheese to eggs. 

No. Nope. No thanks. I decided to wait for Ms. Dorie to send me her recipe and I am so glad she did!

The only thing different in my recipe is that I added some herbs and seasonings but otherwise, this is Dorie's recipe.

The original recipe calls for croutons and bread crumbs. I asked Dorie if she ever just made the breadcrumbs from the croutons and she said sometimes she does, so that's what I did. No sense in letting half a bag of croutons go stale in my pantry (which is very likely what would happen here).

Well, also I didn't know if the mushroom caps were supposed to go in facing up or down and felt like I'd already bugged her enough with my questions so I put mine in stem-side up (figuring the sauce and cheese might get down in the mushrooms this way). I don't think it matters, honestly.

HOW TO MAKE MUSHROOM CASSEROLE

The full, printable recipe card is posted below but here are a few pictures to help you follow the main steps for layering the recipe:

  1. Add a single layer of croutons
  2. Top with sauteed onions and mushrooms
  3. Add mushroom caps in a single layer

Mushroom Casserole! A simple casserole recipe with sauteed mushrooms, onions and herbs layered with seasoned croutons and mushrooms caps under a creamy, parmesan cheesy layer topped with buttered bread crumbs.

NOTES & TIPS ON MAKING MUSHROOM CASSEROLE

  • Choose the smallest mushrooms for layering the whole caps. Larger mushrooms might not cook all the way through. If all of your mushrooms are on the large side (say wider than 2 inches), cut them in half before layering.
  • Try to clean your mushrooms with a damp towel rather than submerging them in water. If it can't be helped (sometimes it can't!) place wet mushrooms on a clean kitchen towel to absorb any excess water. 
  • When choosing your baking dish, select something that all or most of the mushroom caps will fit in a single layer.
  • You can crush the croutons for the topping in the bag they came in. Hold the bag closed with one hand then whack the bag with a rolling pin to break the croutons into crumbs.
  • Feel free to substitute fresh minced garlic for the garlic powder (I'd use 1 tablespoon) and/or dried parsley for the fresh (2 tablespoons).
  • Freshly grated parmesan is best in this! The preshredded stuff (and the stuff in the green can) doesn't melt as well.

WHAT TO SERVE WITH MUSHROOM CASSEROLE

This would make an amazing vegetarian main dish. Pair it with some good crusty bread et voila, dinner is served! But if you've got meat eaters to feed, I would make this as a side and serve it with any of these:

A simple casserole with sauteed mushrooms, onions and herbs layered with seasoned croutons and mushrooms caps under a creamy, parmesan cheesy layer topped with buttered bread crumbs.

Ingredients

  • 1 5-oz bag seasoned croutons, divided
  • 1/2 cup butter, divided
  • 1 lb button mushrooms
  • 1 medium onion, diced
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1 can cream of mushroom soup
  • 1/4 cup milk
  • 2/3 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. Clean mushrooms then cut off stems. Dice stems then set aside to be cooked with onion.
  3. Arrange mushroom caps in a single layer in the bottom of a small, shallow baking dish (1.5-2 quarts) to see how many will fit (you will likely have a few left over). Remove mushrooms then set aside to add back later. Dice leftover mushrooms to add to the diced stems.
  4. Spray the baking dish with cooking spray (or rub with additional butter) then line the bottom with one layer of croutons (about 2/3 of the bag). Set remaining croutons aside to use later (you should have about 1 heaping cup of croutons remaining).
  5. Sauté diced mushrooms/stems and onions with 1/4 cup butter (1/2 stick) over high heat 4-5 minutes or until onions are soft and starting to brown. Stir in pepper, garlic, thyme and salt then pour mixture over croutons. 1/2 tsp each pepper and garlic, 1/4 tsp each thyme and salt
  6. Arrange mushrooms caps over sauteed mixture.
  7. Whisk together mushroom soup and milk until smooth then spoon evenly over mushroom caps. 1 can soup, 1/4 c. milk
  8. Sprinkle parmesan cheese then parsley over top. 2/3 c. parmesan, 1/4 c. parsley
  9. Crush reserved croutons into breadcrumbs. Melt remaining 1/4 cup butter (1/2 stick) then combine with crushed croutons. Sprinkle buttered crouton crumbs evenly over casserole.
  10. Bake at 350 degrees for 30-40 minutes or until bubbly. Cover lightly with foil if crouton topping starts to brown too much before casserole is bubbly.

Notes

  • Step 3 of the recipe could be optional but I added it so that no mushrooms go to waste. You will likely have some that won't fit in a single layer in the baking dish. You'll want to know that ahead of time so that any mushrooms that don't fit can be diced and cooked with the stems and onions.
  • You can use button mushrooms or baby bellas.
  • Use any flavor seasoned croutons.
  • 1 5-oz bag of croutons yields about 3 cups.
