Haleakala Cake - Weekend Potluck 374

A virtual recipe swap with dozens of new recipes from some of the TOP recipe creators online and on Pinterest!


Being the coconut lover I am, I knew I had to check out this recipe for Haleakala Cake! Being the curious soul I am, I also had to google "Haleakala" to find out what that's all about!

Turns out Haleakala is the massive volcano in Maui that makes up most of its land mass. OK, that makes sense! This cake has a mountain of bright yellow pineapple filling on top that's covered with coconut and frosting so that totally makes me think of lava on a mountain!

Or maybe it's because coconut and pineapple are super common in Maui. Either way, I want to make a Haleakala Cake!
