Growing up, Mama made a Tuna Casserole that I LOVED.

Reading that sentence really puts into perspective for me how much times have changed… at least one of my kids would saw his toe off with a plastic spoon before he tried tuna casserole. But I loved it as a child!

Our tuna casserole is topped with buttery bread cubes that bake up golden brown and delicious and boy, lemme tell ya, when I’d see that thing come out of the oven, my mouth would water with anticipation!

I got to thinking about that casserole last week and wondered what else I could cook with a topping like that.

The topping is really just buttery toast cubes so I thought… what dishes do you serve over toast?

And WHAM-O! I remembered S.O.S.! That same kid of mine that would rather saw his toe off than try tuna casserole loves S.O.S.! That makes no sense, right? Kids are weirdos. Seriously, though, he loves it.

The first time I ever served S.O.S., I made his plate first then cut everything up (because he was too little to use a knife and fork back then). I sat down to make my plate, looked over and he’d already cleaned his plate! And was asking for more!

Want more proof that kids are weirdos? He loves S.O.S. but won’t eat sausage gravy over biscuits. And he loves sausage AND biscuits.

So anyway, I decided to make a casserole using a hamburger S.O.S. gravy base then top it with the bread cubes. And it was glorious! I am adding this recipe to my Christmas morning breakfast buffet!

I've heard several theories as to where S.O.S. got its name. Daddy first had this in the Army where they called it "Sh!t On a Shingle". He said that's what it was called because you put this "gravy looking sh!t" on a piece of toast that was so stale, it looked and tasted like a shingle.

That makes perfect sense to me.

I've also heard that your guts will be in big trouble when you eat this so you'll be in distress and calling for help (sending out an S.O.S.).

We also make this with dried chipped beef but don't call it S.O.S. (though I know many people do). We call it Creamed Chipped Beef. Mama and I actually prefer this version better but the kiddos love the ground beef one so that's what I make the most!

HOW TO MAKE S.O.S. GRAVY

I’ll include this information in the recipe below, but just in case you ever need it, this is how I make my S.O.S. gravy:

  1. Brown ground beef in a large skillet until cooked through. Pour contents of pan into a colander to drain.
  2. Meanwhile, melt 1/2 cup butter in the skillet over medium heat.
  3. Add 1/2 cup flour to melted butter then stir with a whisk and cook for one minute.
  4. Pour 2 cups of milk into skillet then whisk and cook until mixture begins to thicken.
  5. Pour 2 additional cups of milk, salt, pepper and cooked ground beef into skillet. Cook and stir until mixture is thickened into a velvety gravy.

A quick and easy casserole recipe made with S.O.S. creamed hamburger gravy topped with buttered toast cubes perfect for breakfast or dinner.

Ingredients

S.O.S. Gravy
  • 1 pound lean ground beef
  • Salt and pepper
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups milk, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Toast Topping:
  • 10 cups bread cubes (see notes)
  • 1/2 cup butter, melted

Instructions

S.O.S. Gravy:
  1. Brown ground beef in a large skillet, seasoning with salt and pepper. Once beef is cooked through, pour contents of pan into a colander to drain.
  2. While beef is draining, melt butter over medium heat in the skillet. Once butter is melted, add flour then cook and whisk for one minute.
  3. While continuously whisking, pour 2 cups milk into skillet. Cook and whisk for 2-3 minutes or until mixture begins to thicken.
  4. Add remaining 2 cups of milk, cooked ground beef, salt and pepper to skillet then continue cooking until mixture is almost as thick as you like your gravy (or approximately 5 minutes). We’re under-cooking the gravy just a bit because it will continue to thicken while the casserole bakes. Taste for seasoning then add more salt and pepper if desired.
  5. Pour mixture into a 13x9 3-quart baking dish.
Toast Topping:
  1. Drizzle melted butter over bread cubes then gently toss to combine.
  2. Arrange bread cubes over S.O.S. gravy then bake at 375 degrees for 15-20 minutes or until bread cubes are golden brown. Serve immediately.

Notes

  • Use a thicker sliced bread if available. I used 9 slices of Sara Lee Artesano Bakery Bread. 
  • I cut some of the crust off of my bread but that’s totally optional.
  • You don’t have to remove the ground beef from the skillet before adding the butter and flour (plenty folks don’t) but I’ve always found my gravy turns out perfectly smooth and silky if I cook the roux separately and add half the milk before adding the meat back. Plus they pump so much water into meat these days, the pan drippings contain a lot of extra liquid which can throw off the gravy.
  • Feel free to add mushrooms to your gravy (that’s how Mama likes it) or to make this with chipped beef instead of hamburger.

Then I need to check my pecan stash because this Pecan Pie Bread Pudding is happening soon! I think I might even have to make it for Thanksgiving!

The potluck has been HOPPING with awesome recipes here lately! I think it's because the weather's finally starting to cool off which makes us all a little more inclined to get in the kitchen! Maybe we're all knocking the cobwebs off our cooking skills since Thanksgiving's right around the corner!

Parmesan Spinach Balls

A year or two ago I asked on the FB page what some of your favorite appetizer recipes were because I was looking for new ideas. Y’all gave me tons of ideas but the one that really stuck in my mind was one my friend, Meg, suggested: Spinach Balls!

Yes, I’ve had that tucked in my gourd all this time. This is why I can’t remember to pay the water bill on time… I’ve got random things like must try spinach balls because Meg loves them and she has excellent taste so they must be great floating around in my head.

I’d never even heard of them. A quick google search yielded tons of recipes. Do you ever wonder how a gozillion people know about something and you’ve never even heard of it?? I looked at several recipes to get a concept of the basic structure then came up with this recipe.

Most recipes either called for seasoned bread crumbs or dry herb stuffing. After glancing at enough recipes I figured one box of Stove Top would yield about the right amount so I went with that.

Then I wouldn’t have to throw away any unused bagged stuffing that went stale and I thought I’d enjoy the heartier texture of the Stove Top more than the finer meal of the bread crumbs.

I thought these were fantastic! Husband runs screaming from anything green so he wouldn’t even try them. He earned himself a swat in the ear when he walked by and made a gagging sound but everybody thought they were fantastic!

So often I find myself going heavy on the “meat” appetizers and not making many alternatives like this recipe. Sure, I’m always good for a veggie tray and I can lay out a mean cheese board but I don’t really have any cooked, savory vegetable appetizers. Until now!

I also think this might be a fantastic side dish if cooked in a casserole dish!

4 NOTES ON MAKING SPINACH BALLS

  1. Substitute Pepperidge Farm or another favorite brand of stuffing if desired – you will need approximately 2-1/4 cups.
  2. The consistency of the mixture depends entirely on how moist the spinach is. If you find your mixture is too dry to roll into balls, add one beaten egg or two egg whites. If it is too wet, add parmesan cheese.
  3. These are awesome served with ranch dip.
  4. If you don’t have a box grater or a food processor for the onions, just finely mince them.

An easy, crowd-pleasing recipe for bite-sized appetizers using spinach, parmesan cheese and herb stuffing.

Ingredients

  • 2 10-oz packages frozen chopped spinach, thawed
  • 1 medium onion
  • 1/2 cup butter, melted
  • 4 eggs, beaten
  • 3/4 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 6-oz box Stove Top stuffing (any kind)

Instructions

  1. Preheat oven to 350 degrees.
  2. Drain spinach very well then add to a mixing bowl.
  3. Grate onion with a box grater (or chop with a food processor) then add onion to the spinach.
  4. Add melted butter, eggs, parmesan cheese, garlic powder and salt then stir well.
  5. Fold in dry stuffing mix. Add more parmesan cheese if necessary to ensure the consistency is thick enough to be rolled into balls.
  6. Roll mixture into 1-inch balls then place on a greased baking pan (they do not plump when they’re cooked so you can place them fairly close together). Bake at 350 degrees for 15-20 minutes or until slightly brown on the bottom.

Notes

For me, the perfect casserole recipe has to be EASY (otherwise you'd just cook a traditional meal) and this recipe is exactly that! You don't need to brown the chicken or use cooked rice. It's a true "dump and go" casserole recipe!

If you’ve been with me very long you know how much I love rice. It is my verrrrrry favorite food of all time! Not plain rice, mind you (though I like it too), I mean savory dishes made with rice.

My baby boy – well, he’s 12 now so I guess he’s not a baby anymore except he is because he’ll always be my baby – asked me the other day what one food I would pick if I could only have one thing for the rest of my life.

I quickly answered that I would choose rice! He opened his mouth to tell me his answer (which was probably something like Milk Duds) then stopped and just looked at me for a minute…

Then he asked if he chose rice too would that include fried rice, the rice at our favorite Mexican restaurant and chicken bog (like, who am I? the hypothetical game rule maker??). I said sure, why not?! then he told me he wanted to change his answer to rice too.

That apple didn’t fall far from the tree, eh?

I have a few rice casserole dishes I make all the time (I’ll list them below) that include ground beef, pork chops or sausage but none that are made with chicken so this weekend I decided to make a new casserole recipe using chicken and rice!

I used chicken broth and cream of celery because I think chicken and celery just go together but also because – and this is weird – I really love cream of celery soup for cooking! They’ve come a looooooong way with canned creamed soups so I use them more than I once did but I especially like cooking with cream of celery. If it’s not your thing, feel free to use whichever variety you like best!

My fear about using cream of chicken in this was that I didn’t want the dish to be too “chickeny”… I wanted there to be some other flavor kicking around in the dish. And since Husband haaaaaates mushrooms, I didn’t use cream of mushroom. But again, use whichever you like best!

I’m sitting here typing this up, about to start with the actual recipe, and I got to thinking about something. I see beautiful chicken and rice casserole recipes online all the time but when I click over to look at them, most of them are made with instant rice and I HATE INSTANT RICE so I suck my teeth and move on.

So, I started wondering why?

What’s wrong with me that I hate instant rice so much? So, I googled it and learned a little about what the difference is. It’s not that I’m a rice snob (well, I kinda am because my part of the South is BIG on rice and we pride ourselves on our rice-making ability), it’s because it’s a stripped-down, processed version of regular rice!

Check out this article from The Watering Mouth that explains more about the process of how instant rice is produced. In summary, the writer, Cheri, says:

“This process removes virtually all nutrition that the rice could have contained along with most of the flavor and almost all of the texture. What you’re left with is a mushy, shell of a rice grain that has practically no redeeming qualities.”

Creamy Chicken & Rice Casserole

An easy casserole recipe for creamy rice and fork-tender chicken that cooks in one dish. No need to precook the rice or brown the chicken first – just mix and bake!

Ingredients

  • 3 large boneless, skinless chicken breasts
  • 2 14.5-oz cans chicken broth
  • 2 10.5-oz cans cream of celery soup
  • 1/4 cup butter, melted
  • 2 cups long-grain white rice
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1.5 teaspoons paprika
  • Additional salt & pepper

Instructions

  1. Preheat oven to 375 degrees. Spray a 3-qt 13x9 baking dish with cooking spray (or rub with butter) then set aside.
  2. Combine chicken broth, cream of celery soup, butter and rice in a bowl then stir to combine.
  3. Mix pepper, salt, garlic and paprika separately then add HALF of the seasoning combination to the rice mixture and stir well. Pour rice mixture into prepared dish.
  4. Cut each chicken breast in half then season each side with additional salt & pepper. Arrange chicken on top of rice mixture then sprinkle the remaining seasoning combination over entire dish.
  5. Cover tightly with aluminum foil then bake at 375 degrees for 1 hour and 15 minutes. Remove aluminum foil then continue baking for 10 additional minutes. Remove from oven then allow dish to rest 10-15 minutes before serving.

Notes

  • It is imperative that the dish be covered tightly with aluminum foil – consider covering with two layers.
  • If rice is not tender, remove chicken then return foil to dish and continue baking for 5-10 minutes or until rice is tender.
  • You must use a 3-qt or larger baking dish for this recipe to prevent the dish from cooking over.
  • Consider placing a cookie sheet under your dish to prevent any messes. Better to have it and not need it than need it and not have sometimes, ya know?
  • Feel free to use cream of chicken or mushroom soup instead of cream of celery.
  • Cutting the chicken into two pieces is totally optional. Feel free to leave the chicken breasts whole.
  • This recipe could easily be cut in half. If using a 13x9 dish, reduce initial cooking time to 1 hour. If using something smaller, cook per the instructions above.

We finally had a weekend off! WHOOP! WHOOP! We didn’t have any plans and miracle-of-miracles, none of the kids had any sporting events or practices, so I decided to enjoy a day relaxing and watch some college football!

We’re one of those weird families in South Carolina who root for both Clemson and USC (the University of South Carolina, that is, not that other school in southern California). I know, I know, I know. You’re thinking that’s sacrilegious, but I didn’t go to either school soooo....

Really, I think I never got into either because nothing could ever compare to the pure JOY I experienced with high school football. My tiny, rural, country home-town high school managed to win 3 back-to-back state championships while I was there. Getting to watch my whole town come together around something like that and seeing boys I'd known my whole life pull off the unimaginable was like something from a movie. And I'll never forget that feeling of pride and spirit. No other football program has come close to grabbing my heart like that and I doubt it ever will.

But I do like to see any college team that represents my home-state do well. Plus Husband is Canadian and doesn’t bleed garnet or orange (and is quietly just waiting for hockey season to start) so we just watch both teams.

When the Clemson/Carolina game is on I still join in on the excitement, but mostly I enjoy watching my friends root against each other. Lawzamercy, college football fans are ruthless! 

Since we made a day of laying around the house watching football, I decided to make this family-favorite because it's an appetizer that can easily moonlight as supper if I'm not in the mood to cook much!

And seriously, don't you just want to snatch one of those little piggies and take him for a swim in that gooey chili cheese dip?!

I wish I could say that I invented this recipe (because COME ON!  this is brilliant!) but I’d be lying if I did. I actually spent some time this morning trying to track the recipe back to the original source so I could give credit where it's due but I just kept going in circles.

Almost all of the recipes I looked at were identical so I went with the basic formula. Once I tasted the chili dip mixture I felt that it needed a little jazzing up so I added some spices.

If you don’t happen to keep these spices on hand, season yours with a little taco seasoning and you should be good to go!

Actually, now that I’ve made this, I’m TOTALLY going to serve this chili cheese dip by itself with tortilla chips because it is creamy, spicy, awesome deliciousness all on its own!

Once we started eating it, the melted cheese on top sort of got swirled into the rest of the dip and it was AH! MAZE! ING!

You’ll have more dip than you have Pigs-In-a-Blanket so bust out a bag of Fritos or tortilla chips to serve alongside your dippers!

INGREDIENTS TO MAKE PIGS-IN-A-BLANKET CHILI CHEESE DIPPERS:

  • Crescent roll dough
  • Cocktail wieners
  • Cream cheese
  • Cheddar cheese
  • Canned chili
  • A few spices

NOTES ON MAKING PIGS-IN-A-BLANKET CHILI CHEESE DIPPERS

This recipe makes a lot of chili dip so plan on serving with tortilla chips or making additional Pigs-In-A-Blanket.

I use Hormel chili without beans but feel free to use your favorite brand or use chili with beans.

Use 1-2 teaspoons taco seasoning in the chili dip instead of the spices I have listed if desired.

I use Hillshire Farms Lit'l Smokies.

Pigs In a Blanket baked around an easy chili-cheese dip for dunking makes for bite-sized chili-cheese dogs, the perfect party, tailgating or gameday appetizer recipe!

Ingredients

  • 1 15-oz. can chili
  • 1 8-oz. package cream cheese, softened
  • 1 8-oz. block cheddar cheese, shredded & divided
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1 can crescent roll dough
  • 1 14-oz package cocktail wieners

Instructions

  1. Preheat oven to 375 degrees. Spray a 9-10 inch shallow pie plate (or something similar in size) with cooking spray.
  2. Add chili to a microwaveable bowl then heat until bubbly. You can also heat on the stove then pour into a mixing bowl if you'd prefer.
  3. Add cream cheese, 3/4 of cheese, garlic powder, chili powder and cumin in a small bowl then stir until cream cheese has melted into the chili.
  4. Spread chili mixture into prepared pie plate. Sprinkle remaining cheese over chili mixture.
  5. Unroll crescent dough then cut each triangle into three long triangular shaped strips of dough. Roll one cocktail wiener in each strip of dough to make “pigs in a blanket”. Place wrapped piggies around the outer edge of the pie plate. Bake any extra piggies on a separate baking pan.
  6. Bake, uncovered, at 375 degrees for 12-15 minutes or until “pigs in a blanket” are golden brown and cheese is bubbly. Remove from oven then garnish with fresh chopped chives if desired.
