I've spent more time thinking about this pizza than I'd like to admit. There are two pizzas from my childhood that occupy big spaces in my memories. And they might have been the same thing. 

The first is the rectangle pizza we were served for school lunches from middle school on through high school. For me, that would be about 1986-1993. Prior to middle school, we still had the rectangle pizza but it was more of a deep dish affair that had a very thick crust and gave me hella heartburn.

Which is hilarious because Mama cut all my hair off in first grade (thanks) and I had a legit businessman hairstyle (side part and all) so thinking of 8-yr old me walking around looking like a car salesman wincing from heartburn sounds like the makings of a fabulous sitcom about growing up GenX.

Anyway, I'm pretty certain whatever we were eating from middle school on wasn't homemade and am convinced it was just frozen pizza but MY GOD we loved it!

And just like the rest of the unsupervised hooligan children coming of age in the 80's, I ate my share of frozen pizzas at home too. My favorite? Totino's Party Pizzas!! The Combination variety, to be exact!

Looking back on it, the school pizza HAD to just be Totino's (or an institutional version of it) because I swear, they tasted the same to me!

The moral of the story is that I absolutely LOVE the crispy, rectangle frozen pizzas and have given them considerable thought through the years.

Now, as recipe creator, I decided to figure out how to make something that comes close. And I did!! This recipe comes close. I won't sit here and try to tell you it's exact because it's not.

Real Totino's Party Pizzas start with a FRIED crust. I didn't want to fool with all that (and doubted you did either) so I made a recipe that somewhat fries the crust in the bottom of the oven first then we make the pizza!

NOTES ON THE MOZZARELLA

  • Use part skim or whole mozzarella but DON'T use fresh mozzarella. Look for packages that read "low moisture" or "melt & stretch". Fresh mozzarella will weep and make the pizza soggy.
  • Absolutely shred your cheese from a solid block and don't use preshredded mozzarella. It just doesn't melt as well and if you're going through the trouble of making your own dough, you might as well go all out and shred your own cheese!
  • Totino's Party Pizzas have a little less cheese. If you're aiming to recreate a Totino's pizza, use about 12-oz of cheese instead of the entire 16-oz block.

FAQ ON SHEET PAN PARTY PIZZAS

Why olive oil and vegetable oil?  We're not using olive oil in both applications because the flavor is pretty pronounced and doesn't yield the same taste as the pizzas this recipe was crafted after. You can absolutely use all vegetable oil and omit the olive oil. By vegetable oil, I mean any neutral cooking oil.

Why do we cook the crust separate?  That's how we get that crispy bottom crust!

Can I omit or reduce the oil in the pan?  Not if you want the crispy crust. Totino's Party Pizza crusts are actually fried first. We're mimicking the frying by cooking the crust in oil on the bottom rack of a super hot oven. 

Do I do anything different to make an all cheese pizza?  Add 1 cup shredded cheddar cheese (and omit the meat toppings obviously). 

Why mini pepperonis?  No culinary reason. I'm not willing to buy a whole piece of unsliced pepperoni from the deli to make the traditional tiny cubes so the next best thing is to use the minis. You can use whatever you like!

What size is a half-sheet pan?  Half sheet pans are typically 18x13 inches.

Can I make this in a 13x9 pan?  Unfortunately, no. The dough must be spread thin to work (otherwise it would be dense and tough).

What do I do if my dough won't spread/stretch enough to cover the bottom of the pan?  Two things. Pick it up by two corners (side by side, not diagonal) and let the weight of the dough stretch itself (then do the same on the opposite side). You can also just let the dough rest 10 minutes then try again.

HOW TO FREEZE PARTY PIZZAS & COOK LATER

  1. Follow the recipe through Step 5 but only bake the pizza ONE MINUTE. You technically don't have to bake it at all but it really helps the cheese stay on the pieces of pizza when freezing.
  2. Cool pizza completely in the pan then cut into 8 rectangles.
  3. Place each frozen pizza in a quart-sized zip-top bag (you can fit two in one bag but place them back to back).
  4. Freeze up to 3 months.
  5. To cook, preheat oven to 450 degrees. Cook pizzas directly on the rack for 10 minutes or until cheese is melted and bubbly.

Ingredients

Crispy Pizza Crust
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 tablespoon sugar
  • 2 tablespoons olive oil
  • 3 tablespoons vegetable oil
  • 1 cup warm water
Party Pizza
  • 2/3 cup pizza sauce
  • 16 oz mozzarella, shredded
  • 1/4 cup grated parmesan cheese
  • 1/2 lb Italian sausage, cooked & crumbled
  • 1/2 cup mini pepperonis

Instructions

Crispy Pizza Crust
  1. Combine flour, salt, baking powder and sugar in a mixing bowl then whisk together. 2.5 c. flour, 1 tsp salt, 1/2 tsp baking powder, 1 Tbsp sugar
  2. Add olive oil and water then stir into a shaggy dough. 2 Tbsp olive oil, 1 c. water
  3. Turn dough out onto a lightly floured surface. Knead the dough until it comes together into a tight ball (about 1 minute). Just flatten it then fold it in half onto itself 15 times or so, rotating it by 90 degrees each time.
  4. Place dough in a greased bowl, cover with a tea towel or plastic wrap then let it rest 15 minutes.
  5. Meanwhile, preheat oven to 450 degrees and place oven rack in the bottom position.
  6. Flour the back side of a half-sheet pan (13x18). You don't have to use the backside of the pan but it makes a perfect template.
  7. Remove dough ball from the bowl then pull into an elongated shape (this makes it easier to roll and shape into a rectangle).
  8. Using floured hands and a rolling pin, spread dough to cover the backside of the entire pan. Pick the dough up by the corners to help stretch it if necessary.
  9. Add vegetable oil to a second sheet pan (or simply slide the dough rectangle onto a clean surface and use the original pan right-side up) then spread oil evenly with a pastry brush (or clean hands). 3 Tbsp vegetable oil
  10. Place dough rectangle into greased pan then perforate with a fork every 3 inches or so.
  11. Bake at 450 degrees on the bottom rack 10-12 minutes or until the bottom of crust is light, golden brown (just peak under a corner).
  12. Remove from oven then assemble pizza.
Party Pizza
  1. Move oven rack to the middle position in the oven and keep temperature set at 450 degrees.
  2. Spoon pizza sauce evenly over pizza, going all the way to the edges. 2/3 c. sauce
  3. Sprinkle mozzarella and parmesan on top. 16-oz cheese
  4. Add crumbled sausage and pepperoni evenly over top. 1/2 lb sausage, 1/2 c. pepperoni
  5. Bake at 450 degrees on the middle rack for 10-14 minutes or until cheese is starting to bubble and brown.
  6. Remove pizza from oven, cut into 8 rectangles then serve immediately.

Notes

  • Fennel seed is one of the predominant spices in the Totino's Party Pizzas. Consider adding some to the pizza sauce!
  • Use part skim or whole mozzarella but DON'T use fresh mozzarella.
  • Remove the pizza from the pan if you're not ready to serve immediately. The bottom crust will lose it's crispiness if left in the pan too long.
  • Use as much or as little sauce and toppings as you'd like.

Cheesy Beef & Noodle Casserole

A super simple casserole with ground beef, noodles and cheese sauce (and no sour cream or tomatoes) very similar to Hamburger Helper's Cheesy Beef Pasta.

This easy meal has some of my favorite comfort food qualities.. it has pasta, it's cheesy, it's easy, the kids love it, it's affordable and... it's delicious!

I made this recipe to taste like Hamburger Helper's Cheesy Beef Pasta. I like Hamburger Helper. Is it full of overly processed ingredients? Yes. Is it good for me? No. Do I like it anyway? Yep!

I mean, what's not to like about pasta, ground beef and sauce? And this recipe is a casserole, no less! Even better!

I usually make this as a "noodle bake" that finishes in the oven but it's technically ready to eat as soon as you stir the noodles in. We're just popping it in the oven to melt the cheese on top and make sure everything is thoroughly heated. I included an alternative stove-top preparation in the recipe card below.

Unless I'm just really pressed for time, I pop it in the oven then use the 15-20 minutes it bakes to tidy up the kitchen, set the table, start loading the dishwasher, etc.

The ingredients are listed just below but let me point out that two of them are KEY in making this taste like Hamburger Helper's Cheesy Beef Pasta: Condensed Cheddar Cheese soup and Lipton Beefy Onion soup mix (so try not to substitute either!).

3 TIPS & SUGGESTIONS

  1. You can easily make this stretch into a bigger batch. All you'll need to do is cook the whole 12-oz bag of noodles then add 1 cup shredded cheese and 1 cup pasta water when mixing everything together then bake in a 13x9 dish. You can add more ground beef if you like but that's up to you.
  2. Use medium or wide egg noodles (the wide still being pretty small). If using home-style, extra wide or dumpling size egg noodles, increase amount to 5 heaping cups.
  3. You can make this lean more toward stroganoff by using Cream of Mushroom soup instead of Cheddar Cheese soup and any mild white cheese instead of cheddar.
  4. If you make this ahead of time (and it has time to cool before going in the oven), you'll need to increase the baking time accordingly.

FAQ ON CHEESY BEEF & NOODLE CASSEROLE

Can I use ground turkey, pork or chicken?  Of course!

Can regular Lipton Onion soup mix can be used instead of Beefy Onion?  Technically, yes, but I definitely like the Beefy Onion much better in this.

Can I use other creamed condensed soups instead of the Cheddar Cheese Soup?  Yes, but the Cheddar Cheese soup is key in making this taste so much like Hamburger Helper's Cheesy Beef Pasta.

Can another type of cheese be used on top of the casserole?  Sure! Any semi-soft cheese that melts well can be used.

Can this be frozen?  I'm not sure. I mean, I'm sure it can but I haven't my self so I'm not sure how to reheat it or if it will need additional liquid.

Ingredients

  • 1 lb ground beef
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 4 cups egg noodles (uncooked)
  • 1 envelope Lipton Beefy Onion soup mix
  • 1 can condensed cheddar cheese soup
  • 1 cup milk
  • 4 oz cheddar cheese, shredded

Instructions

  1. Preheat oven to 375 degrees.
  2. Cook noodles per manufacturer's instructions for al dente preparation. Drain then set aside.
  3. Meanwhile, cook and crumble ground beef with pepper and garlic in a large skillet over high heat until meat is cooked through and nicely browned. Drain excess pan drippings from meat.
  4. Add soup mix, condensed soup and milk to ground beef in skillet. Stir and cook over medium heat until well combined and starting to bubble. Turn off heat.
  5. Add cooked noodles to skillet with beef mixture then gently stir.
  6. Pour everything into a small baking dish (1.5-2 quart) then top with shredded cheese.
  7. Bake, uncovered, at 375 degrees for 15-20 minutes or until cheese is melted.
ALERNATIVE STOVE-TOP PREPRATION:
  1. Follow recipe through Step 5
  2. Sprinkle cheese on top, cover skillet with aluminum foil then let rest until cheese is melted (about 5 minutes). So long as everything was bubbly hot before noodles were stirred in, the cheese will melt just fine.

Notes

  • This makes 4 generous portions (for adult-sized appetites) or 6 smaller portions.
  • 4-oz cheese yields about 1 cup shredded.

Porcupine Casserole

An easy rice bake based on the classic retro recipe for Porcupine Meatballs made with ground beef, rice and tomato sauce topped with cheddar cheese.

This recipe was inspired by the old-school classic meatballs made with rice served with a simple tomato sauce. When the meatballs cook, so does the rice, which pokes out of the meatballs in a prickly fashion that well, kinda looks like a porcupine!

I only ever had the original meatballs a time or two as a child but I always remembered them! Most people remember vacations and treehouses from their childhoods, I remember food. Very clearly and precisely. Maybe that’s why I grew up to be a recipe writer?? It sure explains the size of my rear-end anyway! 

The recipe stuck with me, and as I was laying in bed one night thinking about the meatballs (doesn't everyone? no??), I figured the key ingredients would make a spectacular casserole! So when my fridge and pantry had everything I needed to try it, I jumped on it this morning!

I LOVE THIS RECIPE. OK, I know all food bloggers say that about everything but I really, genuinely do! Probably because it has rice in it (Amen?) but also because it's a lot like a few other casserole recipes I love that use ground beef and sausage with rice.

One of the first recipes I ever shared, Sausage & Rice Casserole (y'all excuse the old photos) is still one of my all-time favorites. It's the reason I added celery, but I'll get to that in a minute!

8 KEY INGREDIENTS & WHY WE USE THEM

I was pretty deliberate in crafting this recipe because some of the ingredients are musts in the meatballs. I added a few things to make this a well-rounded casserole and something that tastes as good as it is easy to make!

1 - GROUND BEEF - Don't use a super lean mix. We need a little fat to make it yummy (plus this makes a whole 13x9 casserole so the drippings from one pound won't be all that much. I used an 80/20 mix in this batch and it was perfect.

2 - UNCOOKED WHITE RICE - The "porcupine quills" in the meatball recipe were made of uncooked rice. Use uncooked extra long-grain white rice. I don't know how to convert this to brown rice or Minute Rice.

3 - CANNED TOMATO SAUCE - the original meatballs are cooked in a zesty tomato sauce so we're just adding a can with the broth to help flavor the rice.

4 - CELERY - OK, I went out on a limb here. But for two good reasons! A lot of the porcupine meatball recipes I've seen have celery salt in them so the flavor is right. But also because celery is so good in the other rice bakes I mentioned above! You can leave them out but consider adding celery seed or celery salt if you do.

5 - SPICES - The traditional tomato sauce is not a "spaghetti sauce" sort of sauce so I didn't add Italian spices. It's more like what you'd expect with cabbage rolls or stuffed peppers. We're only using salt, pepper onion powder and garlic powder.

6 - SUGAR - I made this with 2 teaspoons sugar and it's just the right amount. See the note above about what the meatball sauce tastes like. If you omit the sugar, you might be disappointed. You could probably substitute the tomato sauce and sugar for one can of tomato soup (since it has a good amount of sugar in it).

7 - WORCESTERSHIRE SAUCE - Don't skip this either. Since there aren't a ton of spices here, we need some umami and Worcestershire is perfect for this. 

8 - CHEDDAR CHEESE - Here I am... still out on that limb. There's no cheese in Porcupine Meatballs. But come on! Don't you look at this and agree the cheese is perfect on top?! You can absolutely leave it off. You could add more too - especially if you're trying to entice the kids to eat porcupines 😋

Ingredients

  • 1.5 cups uncooked white rice
  • 1-lb ground beef
  • 1.5 teaspoons salt
  • 1.5 teaspoons garlic powder
  • 1 teaspoon pepper
  • 1 teaspoon onion powder
  • 1 medium onion, diced
  • 1 cup finely diced celery
  • 3 cups beef broth or bullion
  • 1 8-oz can tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons sugar
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 375 degrees. Add rice to a 3-quart 13x9 baking dish. 1.5 c. rice
  2. Cook and crumble ground beef with salt, garlic powder, pepper and onion powder in a large skillet over high heat until halfway cooked. We want a good sear before adding the vegetables. 1 lb beef, 1.5 tsp each salt and garlic, 1 tsp each pepper and onion powder
  3. Add onions and celery then continue cooking over medium-high heat until meat is cooked through and celery is somewhat tender. 1 onion, 1 c. celery
  4. Add broth, tomato sauce, Worcestershire and sugar to skillet then bring to a boil. Taste for seasoning then add more if desired. 3 c. broth, 8-oz tomato sauce, 1 Tbsp worchestershire, 2 tsp sugar
  5. Pour hot beef mixture into baking dish over rice then stir.
  6. Cover dish tightly with aluminum foil then bake at 375 degrees for 45 minutes.
  7. Uncover dish then top with shredded cheese. Replace foil then let dish rest 5-10 minutes or until ready to serve. 2 c. cheese
Alternative Stovetop Instructions:
  1. You will need to use a large skillet with a tight-fitting lid.
  2. Cook and crumble ground beef with salt, pepper and garlic in a large skillet over high heat until halfway cooked. We want a good sear before adding the vegetables.
  3. Add onions and celery then continue cooking over medium-high heat until meat is cooked through and celery is somewhat tender.
  4. Add broth, tomato sauce, Worcestershire and sugar to skillet then bring to a boil. Taste for seasoning then add more if desired.
  5. Add rice PLUS 1/2 cup water or additional broth then return to a boil.
  6. Stir well, cover, then cook over low heat for 20-25 minutes or until rice is tender. Stir occasionally with a fork the first 15 minutes of cooking then do not open the lid.
  7. Uncover skillet then top with shredded cheese. Replace lid then let dish rest 5-10 minutes or until ready to serve.

  • If you'd like a little sauce to drizzle over top, consider using a can of condensed tomato soup. Simply heat without adding water then serve overtop like a gravy.
  • Feel free to omit the cheese or use a different variety.

This is an easy recipe that tastes more like a freshly made stovetop meal than most of the dump-and-go slow cooker recipes we're used to.

Yes, this has the typical can of cream of chicken soup BUT we're stirring in hot pasta water with freshly grated cheese at the end which makes this taste less like something you settled for because it was easy and more like something you'd order at a restaurant!

This makes a big batch and, because of the magic (OK, science) behind pasta water, the leftovers heat up beautifully and the sauce will be just as glossy and delicious as when it was first prepared!

INGREDIENTS & SUBSTITUTIONS

There's a lot of wiggle-room with this recipe. Below are 8 of the key ingredients for Crock Pot Taco Chicken Pasta, why we use them and ideas for substitutions.

1. CHICKEN BREASTS 

  • You can use less chicken if needed. I've made this a few times with 2 large breasts.
  • You can absolutely use chicken thighs.
  • You could use leftover, rotisserie or canned chicken but you would need to reduce the cooking time by half (you'd really just be heating everything through and ensuring the onions were soft).

2. TACO SEASONING

  • Use any 1-oz regular taco seasoning mix.
  • You can substitute with 2 tablespoons homemade taco seasoning.
  • If you don't have taco seasoning, season with salt, pepper, cumin, chili powder, garlic powder and paprika.

3. ROTEL DICED TOMATOES

  • You can use any variety or similar brand of Rotel Diced Tomatoes & Green Chilies.
  • You could substitute with one can petite diced tomatoes but drain it first.

4. CANNED GREEN CHILIES

  • These aren't a must so feel free to omit if needed.
  • They add a nip of acid to cut through all the richness from the creamy sauce.

5. CREAM OF CHICKEN SOUP

  • You can use any traditional condensed creamed soup (celery, onion, mushroom, etc.).
  • I don't love reduced fat creamed soups in crock pot recipes. They're thickened with cornstarch which breaks down after being cooked so long.
  • Do not prepare the soup before adding to the recipe.

6. PASTA WATER

  • The hot, salty pasta water gives the sauce a glossy quality and helps bind it to the pasta.
  • Don't skimp on the salt. Use about 2 teaspoons table salt for every 2.5 quarts of water.
  • If you plan on reheating leftovers or if the dish will rest awhile before being served, consider saving an additional 1/2 cup to stir in when reheating.

7. MONTERREY JACK CHEESE

  • You absolutely need to shred the cheese for this recipe. Pre-shredded cheese is coated with anti-caking ingredients which make creamy sauces chalky and dry.
  • You can use any mild cheese for this (cheddar, colby jack, etc.) but I like how well monterrey jack melts into the sauce.
  • White American would be the best substitute.

8. PASTA

  • I used rigatoni in the batch pictured here but also like penne, shells and even spaghetti.
  • You can use any type of pasta (strand, bite-size, tubular, etc.)
  • Be sure not to overcook the pasta as it will continue to cook a few minutes in the sauce.

A simple slow cooker recipe for cheesy chicken with pasta in a creamy sauce made with taco seasoning and easy-to-find ingredients.

Ingredients

  • 3 chicken breasts
  • 1 packet taco seasoning
  • 1 teaspoon garlic powder
  • 1 cup diced onion
  • 1 can cream of chicken soup
  • 1 can rotel tomatoes
  • 1 4-oz can green chilies
  • 4-oz cream cheese
  • 1 lb pasta
  • 1 cup pasta water
  • 8-oz monterrey jack cheese

Instructions

  1. Place chicken breasts in a medium-sized crock pot then season with salt and pepper to taste.
  2. Top chicken with taco seasoning, 1 tsp garlic powder, onion, cream of chicken soup, rotel and green chilies.
  3. Cover and cook on Low for 5-8 hours or High for 2-4 hours.
  4. Remove chicken and set aside to cool a bit then shred or cut into bite-sized pieces. I do this while pasta is cooking.
  5. Cut cream cheese into 6-8 cubes then add to crock pot.
  6. Cook pasta in liberally salted water, reserving 1 cup hot pasta water just before draining.
  7. Shred cheese then set aside 1/4 cup to add on top of finished dish.
  8. Add shredded cheese and hot pasta water to crock pot then stir well. Taste for seasoning then add more if needed.
  9. Stir in cooked pasta and shredded chicken then top with reserved shredded cheese.
  10. Garnish with chopped fresh cilantro if desired.
