Crock Pot Pork Roast with Gravy

Home » Crock Pot » Crock Pot Pork Roast with Gravy

Slow-cooked seasoned pork shoulder roast or Boston butt with homemade gravy made with the rendered stock and drippings and no canned soups or cornstarch.

Author: Mandy Rivers | Published: 6/23/26

When I need to feed a full table and really want to put on the dog, this is my go-to recipe! This is the absolute easiest, 100% homemade meal you will ever make. And it will be one of the most delicious too!

The perfectly seasoned pork roast (shoulder or butt) will slow-cook in the crock pot all day, then all of the rendered stock and drippings will be used to make the best pork gravy you've ever tasted!

And all of it will be homemade without any condensed canned soups, packets of gravy or any other artificial ingredients!

DIFFERENT WAYS TO SERVE IT

  • Place all the meat in a pan then cover with ALL of the gravy.
  • Place all the meat in a pan then cover with half of the gravy, reserving the other half to serve over mashed potatoes, noodles or rice (this is usually what I do).
  • Chop half the meat with BBQ sauce for pulled pork then serve the other half with gravy.
  • Make open-faced sandwiches with the pork and gravy (diced onions on top is great!).

THE RECIPE AT A GLANCE

The full, printable recipe card is below but here are the basics of making this meal:

  1. Season the pork roast then cook in the crock pot.
  2. Turn off the heat and let it rest.
  3. Pour off the juices then separate the drippings for gravy (it's easy, see photo below).
  4. Make a roux by cooking the rendered fat with flour.
  5. Whisk in reserved stock to make the gravy.
  6. Remove the bone (if applicable) and fatty bits from the pork roast.
  7. Serve pork with gravy!

HOW TO RENDER THE DRIPPINGS FOR GRAVY

Photo above. Don't let this intimidate you - there's nothing to it!

  1. Pour the rendered pan juices into a large measuring pitcher then let things settle a few minutes so the fat and liquid separate.
  2. Using a ladle and a steady hand, skim off the fat by lowering the ladle into the pitcher.
  3. Add the fat to a separate, smaller measuring pitcher.
  4. You're ready to cook with the separated drippings!

A FEW TIPS THAT MIGHT BE HELPFUL

  • Use a 5-6 pound boneless, or 8-9 pound bone-in shoulder or butt for this recipe.
  • If your meat doesn't produce quite enough liquid pan drippings to make the gravy, add prepared chicken or beef broth to make 4 cups.
  • If your meat doesn't produce enough rendered fat to make the gravy, simply supplement with butter.
  • The longer you cook the gravy (and the longer it sits), the thicker it will get. Once you have reached the desired thickness, cover and remove from heat then stir occasionally until ready to serve.
  • If the gravy thickens too much before serving, simply cook over medium heat then whisk in water to thin it.

5 FAQ ON CROCK POT PORK ROAST & GRAVY

  1. How does this work without adding water or broth to the crock pot?  A large cut of well-marbled meat like a pork roast will yield plenty of stock as it cooks in a crock pot. If we add water, it will boil instead of slow-cook which will make the meat tough.
  2. Can I use this recipe for a pork loin?  No, loins and other lean cuts will not produce enough pan drippings and will also be dry if cooked this long.
  3. What other meat can I use with this same recipe?  Roasting hens and small turkeys (any turkey small enough to fit in the crock pot) are amazing with this recipe! You can also use this a large beef chuck roast or two smaller ones stacked on top of each other.
  4. Can I use my favorite dry rub to season the meat?  Yes, but ONLY IF there is no sugar in it (the gravy will taste like whatever the meat is seasoned with).
  5. Can I use this same method to make turkey gravy?  HECK YES! This is exactly how I make turkey gravy and it is out-of-this-world delicious!

Prep time: 10 MinCook time: 6 HourInactive time: 2 HourTotal time: 8 H & 10 M

Slow-cooked seasoned pork shoulder roast or Boston butt with homemade gravy made with the rendered stock and drippings and no canned soups or cornstarch.

Ingredients

Crock Pot Pork Roast
  • 1 pork large pork shoulder or butt roast
  • 2 teaspoons salt
  • 2 teaspoons smoked paprika
  • 1 teaspoon pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
Pork Gravy
  • 4 cups rendered pork stock
  • 1/2 cup rendered pork fat
  • 1/2 cup all-purpose flour (see note)
  • Salt & pepper to taste

Instructions

Crock Pot Pork Roast
  1. Combine seasonings then rub over all sides of pork roast. Place the roast, fat side down (if applicable) into a large crock pot.
  2. Cook per one of the time/temp methods below:
  3. HIGH - cook for 5-6 hours
  4. LOW - cook for 9-10 hours
  5. COMBO (preferred): cook on High 4 hours then Low 3-4 additional hours.
  6. Turn off heat then allow the roast to rest in the cooker, covered, for 2 hours.
  7. Remove meat to a pan then cover with aluminum foil while the gravy is made.
  8. Remove bone (if applicable) and all fatty bits, placing sections of cooked pork on a cutting board or pan (depending on how you want to serve it - use a pan if topping with some of the gravy).
Pork Gravy
  1. Once the meat is removed from the crock, pour all rendered juices through a strainer into a 4-cup measuring pitcher. If you have more than will fit in the pitcher, simply pour into another vessel.
  2. Allow the juices to sit still at room temperature for several minutes until the fat and liquid separate.
  3. Using a ladle and a still hand, ladle off the rendered fat into a separate measuring pitcher (see pictures above recipe card). You should get about 1/2 cup fat with 4 cups stock remaining. If not, supplement fat with butter and stock with chicken or beef broth to reach those amounts.
  4. Add rendered pork fat and flour to a skillet then whisk until smooth over medium-high heat. Continue whisking and cooking approximately 5 minutes or until light golden brown.
  5. Turn off heat and allow roux to cool 2-3 minutes. It is insanely hot at this point so we don't want to add liquid yet.
  6. Turn heat on to medium then slowly add stock to the skillet, whisking constantly until smooth. Continue cooking until thickened per your preference.
  7. Set heat to low and cover skillet until ready to use.

Notes

  • FLOUR NOTE: If using a dry measuring cup (scoop), use 1/3 cup flour. Liquid and dry measuring cups are slightly different and you want equal parts oil and flour (aim for something a little looser than ketchup when making any roux)
  • Use an 8-9 pound bone-in roast or 5-6 pound boneless. You can use something smaller but reduce the cooking times. You may not have as many drippings - if not, supplement with butter and broth to make the gravy.
  • There is a TON of information (tips, serving suggestions, FAQ, etc.) in the article above (too much to write here) so be sure to have a look!

Easy Crock Pot Tortellini with Italian Sausage

Home » Crock Pot » Easy Crock Pot Tortellini with Italian Sausage

A no-brown, no-boil slow cooker recipe with sausage meatballs cooked in spaghetti sauce under a bed of cheese tortellini and a creamy parmesan topping.

Author: Mandy Rivers | Updated: 10/8/26

This dump-and-go recipe requires no meat to be browned or pasta to be cooked separately. Everything is going in the crock uncooked and coming out as a zesty, saucy Italian dish with meatballs made of Italian sausage and perfectly tender cheese tortellini!

The appeal of crock pot meals (for me, anyway) is that they be really easy. I don't want to have to brown meat or cook anything separately, especially on busy weekdays.

I want to just dump and go then presto! chango!, dinner is served! Otherwise I'd just cook all the stuff the traditional way, which if we're being honest, is going to yield better results in most cases.

A no-brown, no-boil slow cooker recipe with sausage meatballs cooked in spaghetti sauce under a bed of cheese tortellini and a creamy parmesan topping.

WHY THIS RECIPE WORKS

Italian Sausage - Italian sausage links are the perfect way to make easy meatballs. Once you remove the casings, they practically roll themselves and always keep their shape. And the sausage is perfectly seasoned so no extra ingredients needed!

Spaghetti Sauce - A jar of prepared spaghetti sauce is also already seasoned (so we won't need to drag out a bunch of spices and ingredients here either) and creates the perfect base for the meatballs to cook in.

Fresh Tortellini - Fresh pasta takes way less time to cook than dried pasta so we can just toss the tortellini on top at the end, and the heat and steam in the crock pot will cook them perfectly.

Creamy Parmesan Topping - We'll heat some Half & Half in the microwave then pour it over the uncooked tortellini with some garlic powder and parmesan cheese. The starch from the pasta will bind itself to the fats in the Half & Half and parmesan which will make an easy creamy topping! This also ensures the tortellini cooks perfectly and makes them extra delicious.

HOW TO MAKE IT

The full, printable recipe card is down below but here's the basics of how to make this EASY recipe:

  1. Roll sausage links into meatballs then place in the crock (uncooked).
  2. Top meatballs with spaghetti sauce then cook on High 2-3 hours or Low 4-6 hours.
  3. Add tortellini on top.
  4. Heat Half & Half 2 minutes in the microwave, stir in salt and garlic powder then pour over tortellini.
  5. Top with parmesan cheese then continue cooking 15 minutes. That's it!

12 FAQ ON CROCK POT TORTELLINI

1. Can traditional homemade meatballs be used in this?  Sure! Start with uncooked meatballs. They will be more tender than sausage meatballs so they may not hold their shape as well but that's OK!

2. Can I use frozen meatballs instead of sausage?  Technically, yes, but I imagine the texture will be pretty "corky" when cooked this long. I would reduce the initial cooking time by half.

3. What brand Italian sausage is best?  I like Johnsonville and Publix best. The only brand I've encountered that I didn't like starts with a 'P' and rhymes with "chemo" (I think it's too firm and a little tough).

4. Should I use hot, sweet or mild Italian sausage?  I always use hot but any will work!

5. How do you remove the sausage casings easily?  Just run a sharp knife down the length of the sausage to cut the casing then you can peel it right off. It's easier than peeling a banana!

6. Won't the sausage make things greasy?  Oddly, no! Italian sausage doesn't put off as much grease as ground beef and I've never noticed any standing or excess oil in this recipe.

A no-brown, no-boil slow cooker recipe with sausage meatballs cooked in spaghetti sauce under a bed of cheese tortellini and a creamy parmesan topping.

7. Can I use other types of tortellini?  Absolutely! I love this with mushroom tortellini too! So long as it's FRESH, you can use any variety.

8. What type of spaghetti sauce do you like best?  I almost always use Prego (Traditional or Tomato Basil & Garlic) if I'm not using my homemade sauce recipe (which I keep stocked in the freezer).

9. Can I use marinara sauce?  Yes! But keep in mind that marinara sauce usually has a little less spices and salt so you may want to add both if using.

10. Can this be frozen?  I haven't tried it myself but I can't think of a reason it wouldn't freeze well.

11. Can this be made with ground beef instead of Italian sausage?  Yes, but you'll need to season it well (I'd use salt, pepper, oregano and garlic powder).

12.  Can I add peppers and onions?  Sounds good to me! I'd put them on top of the sauce while the meatballs cook.

LOVE THE NO-BOIL, NO-BROWN PART OF THIS RECIPE?

Me too! If this super easy method appeals to you, you HAVE GOT to make the No-Boil, No-Brown Italian Sausage & Pasta Bake! It's a LOT like this recipe but uses traditional dried pasta and bakes in the oven.

Prep time: 10 MinCook time: 4 HourTotal time: 4 H & 10 M

A no-brown, no-boil slow cooker recipe with sausage meatballs cooked in spaghetti sauce under a bed of cheese tortellini and a creamy parmesan topping.

Ingredients

  • 1.25 lbs Italian sausage links
  • 1 24-oz jar spaghetti sauce
  • 1 20-oz pack fresh cheese tortellini
  • 1 1/4 cups Half & Half
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2/3 cup grated parmesan cheese

Instructions

  1. Remove casings from sausage links then cut or pinch off pieces to roll into meatballs (4-5 meatballs from each individual link) then add to a large crock pot.
  2. Pour spaghetti sauce over sausage meatballs. Cover then cook on High 2-3 hours or Low 4-6 hours.
  3. Add tortellini in an even layer on top of sauce and meatballs then cover. Increase heat to High if not there already.
  4. Heat Half & Half in microwave for 2 minutes or until almost boiling. Stir in garlic powder and salt then pour over tortellini. Tortellini should be mostly submerged but if not, press them into the liquid a bit. It's OK if the tops are not completely covered. 1.25 c. Half & Half, 1/2 tsp garlic powder, 1/4 tsp salt
  5. Sprinkle grated parmesan over tortellini, cover with lid then cook on high 15-20 minutes or until tortellini is tender. 2/3 c. cheese
  6. Garnish with additional grated parmesan cheese and parsley if desired.

Notes

  • PRO TIP: Keep the empty sauce jar. The pasta will absorb the sauce the longer it sits (and may get a little dry). Add 1/2 cup HOT water and 2 tablespoons butter to the empty jar (which will have plenty of residual sauce in it), replace the lid then shake vigorously until the butter has melted and the mixture has emulsified, then stir into pasta if it has gone dry (or if you just like things a little saucy). This is also good to do if you have a lot left over and plan on refrigerating it.
  • You can use loose Italian sausage - the links are just really easy to roll into meatballs.
  • You can probably use whole milk or a combo of cream and skim milk in place of Half & Half (though I have not personally tested it).
  • Fresh tortellini is usually found near the prepackaged cheeses in grocery stores.
  • See FAQ above for more info, tips and suggestions.

Crock Pot Cheesy Chicken Taco Pasta

Home » Crock Pot » Chicken Taco Pasta

A simple slow cooker recipe for cheesy chicken with pasta in a creamy sauce made with taco seasoning and easy-to-find ingredients.

Author: Mandy Rivers | Updated: 8/28/26

This is an easy recipe that tastes more like a freshly made stovetop meal than most of the dump-and-go slow cooker recipes we're used to.

Yes, this has the typical can of cream of chicken soup BUT we're stirring in hot pasta water with freshly grated cheese at the end which makes this taste less like something you settled for because it was easy and more like something you'd order at a restaurant!

This makes a big batch and, because of the magic (OK, science) behind pasta water, the leftovers heat up beautifully and the sauce will be just as glossy and delicious as when it was first prepared!

A simple slow cooker recipe for cheesy chicken with pasta in a creamy sauce made with taco seasoning and easy-to-find ingredients.

INGREDIENTS & SUBSTITUTIONS

There's a lot of wiggle-room with this recipe. Below are 8 of the key ingredients for Crock Pot Taco Chicken Pasta, why we use them and ideas for substitutions.

1. CHICKEN BREASTS

  • You can use less chicken if needed. I've made this a few times with 2 large breasts.
  • You can absolutely use chicken thighs.
  • You could use leftover, rotisserie or canned chicken but you would need to reduce the cooking time by half (you'd really just be heating everything through and ensuring the onions were soft).

2. TACO SEASONING

  • Use any 1-oz regular taco seasoning mix.
  • You can substitute with 2 tablespoons homemade taco seasoning.
  • If you don't have taco seasoning, season with salt, pepper, cumin, chili powder, garlic powder and paprika.
A simple slow cooker recipe for cheesy chicken with pasta in a creamy sauce made with taco seasoning and easy-to-find ingredients.

3. ROTEL DICED TOMATOES

  • You can use any variety or similar brand of Rotel Diced Tomatoes & Green Chilies.
  • You could substitute with one can petite diced tomatoes but drain it first.

4. CANNED GREEN CHILIES

  • These aren't a must so feel free to omit if needed.
  • They add a nip of acid to cut through all the richness from the creamy sauce.
A simple slow cooker recipe for cheesy chicken with pasta in a creamy sauce made with taco seasoning and easy-to-find ingredients.

5. CREAM OF CHICKEN SOUP

  • You can use any traditional condensed creamed soup (celery, onion, mushroom, etc.).
  • I don't love reduced fat creamed soups in crock pot recipes. They're thickened with cornstarch which breaks down after being cooked so long.
  • Do not prepare the soup before adding to the recipe.

6. PASTA WATER

  • The hot, salty pasta water gives the sauce a glossy quality and helps bind it to the pasta.
  • Don't skimp on the salt. Use about 2 teaspoons table salt for every 2.5 quarts of water.
  • If you plan on reheating leftovers or if the dish will rest awhile before being served, consider saving an additional 1/2 cup to stir in when reheating.
A simple slow cooker recipe for cheesy chicken with pasta in a creamy sauce made with taco seasoning and easy-to-find ingredients.

7. MONTERREY JACK CHEESE

  • You absolutely need to shred the cheese for this recipe. Pre-shredded cheese is coated with anti-caking ingredients which make creamy sauces chalky and dry.
  • You can use any mild cheese for this (cheddar, colby jack, etc.) but I like how well monterrey jack melts into the sauce.
  • White American would be the best substitute.

8. PASTA

  • I used rigatoni in the batch pictured here but also like penne, shells and even spaghetti.
  • You can use any type of pasta (strand, bite-size, tubular, etc.)
  • Be sure not to overcook the pasta as it will continue to cook a few minutes in the sauce.

Crock Pot Cajun Cabbage Stew

Home » Crock Pot » Cajun Cabbage Stew

This hearty slow cooker stew made with cabbage, potatoes, smoked sausage and a Cajun kick is an easy comfort food recipe perfect for busy days and cool weather!

This recipe is mostly based on my original stove-top recipe for Cabbage Stew but heavily influenced by my recipe for Cajun Crock Pot Cabbage, Sausage & Potatoes.

Let's just say, if the those two recipes had a baby, it would be this one!

And I can't even tell you which one I like best! I love cabbage with the passion only a 50-yr old woman who grew up in the country could!

Crock Pot Cajun Cabbage Stew! This hearty slow cooker stew made with cabbage, potatoes, smoked sausage and a Cajun kick is an easy comfort food recipe perfect for busy days and cool weather!

4 REASONS I LOVE THIS CROCK POT RECIPE

IT'S TRULY EASY - No browning, searing or even stirring required! Seriously, you don't stir it until it's done (read more about that in the FAQ below).

IT COMBINES INGREDIENTS THAT JUST GO TOGETHER - Cabbage, potatoes and smoked sausage just go together. I have several recipes with them that I'll share below.

IT'S PERFECT FOR LEFTOVER HAM - While I love smoked sausage, I've got to add a big, meaty ham bone to the list of things that go with cabbage and potatoes too! See below in the FAQ about how to do it!

IT'S VERSITLE SO MAKE IT YOUR WAY - If you aren't feeling the Cajun vibe, simply omit the seasoning and add salt and pepper instead. Don't want to use Cream of Celery soup? Leave it out or use another variety instead. Want to use andouille or kielbasa? Go for it!

HOW TO MAKE CROCK POT CAJUN CABBAGE STEW

The recipe card below will give you detailed, printable instructions and a full ingredients list but, at a glance, this is all you have to do:

  1. Add potatoes, onions, carrots and condensed soup to a large crock pot.
  2. Add cabbage and seasonings then pour broth over everything
  3. Cut butter into thin pats then arrange over cabbage.
  4. Top it all with sliced smoked sausage then cook.

6 FAQ ON CROCK POT CAJUN CABBAGE STEW

1. Is there a reason the cabbage and sausage are cooked on top of everything else?  Yes, ma'am! Both will overcook if submerged in the liquid this long. This is also the reason the recipe reads not to stir until the end.

2. Can I use olive oil or bacon grease instead of butter?  Absolutely! Feel free to use a combination too. All three are excellent in this recipe!

3. Can I use leftover ham in this recipe?  HECK YES! Use about 4 cups ham pieces. If you have a ham bone and the time, cook down the bone in a covered pot with 4 cups water then use the broth instead of chicken broth.

Crock Pot Cajun Cabbage Stew! This hearty slow cooker stew made with cabbage, potatoes, smoked sausage and a Cajun kick is an easy comfort food recipe perfect for busy days and cool weather!

4. Which Cajun seasoning is the best?  I use Tony Chachere's Creole Seasoning and LOVE it. It is a little on the spicy side so consider using a teaspoon less if you're worried about the heat.

5. Can I use a different condensed soup?  Yes! I've tried several and think the Cream of Celery is BEST in this but mushroom or chicken will work too. I tried it once with Cream of Onion and didn't love the results, though.

6. Which type of potatoes work best?  Any will work! Waxier potatoes like Yukon Gold or red potatoes hold up a little better BUT I also kinda like the way russet potatoes get a little smooshy. It's all up to you and what you like best.

  • 1 lb smoked sausage, sliced

Instructions

  1. Add potatoes, onions and carrots to a large crock pot. Spoon/dollop condensed soup over vegetables. 5-6 potatoes, 1 onion, 2 carrots, 1 can soup
  2. Add cabbage, Cajun seasoning and thyme then pour broth evenly over everything. 1 cabbage, 1 Tbsp creole seasoning, 1/2 tsp thyme, 4 c. broth
  3. Cut butter into thin pats then arrange over cabbage. 6 Tbsp butter
  4. Arrange smoked sausage evenly over everything, cover then cook, without stirring, on High 3-4 hours or Low 6-7 hours or until potatoes are tender. 1 lb sausage
  5. Turn off heat, stir well then let rest, uncovered at least 10 minutes before serving.

Notes

  • Use smoked sausage, kielbasa, andouille or leftover ham (about 4 cups cubed).
  • You'll need about 6 cups of cubes potatoes.
  • If using russets, you'll want to peel the potatoes. If using waxier potatoes with thinner skin (Yukon gold, red potatoes, etc.) feel free to leave the skin on.
  • I've tried it with a couple varieties but I definitely like Cream of Celery best.
  • Stirring the cabbage and sausage into the stew will cause both to overcook.
