Also called Million Dollar Pie, this no-bake dessert features pineapple and cherries in a rich and creamy filling mixed with pecans and coconut for the perfect combination of texture and flavor! 

There's some magic that happens when you combine sweetened condensed milk with real lemon juice. Well, maybe I should say there are two magical things that happen. Plus chemistry.

The first is that the combination naturally thickens into pudding. The acid from the lemon juice reacts with the milk to turn it into nature's custard. It's pretty spectacular and is the reason my grandmother's favorite recipe, Italian Bakeless Cake (which is not Italian and not cake, btw) works so perfectly.

The second is the spectacular taste. These two ingredients work together to create a super fresh flavor that's bight, crisp and tart but still sweet in the best way. And it is the perfect backdrop for the other ingredients.

INGREDIENTS NEEDED FOR MILLIONAIRE PIE

  • Graham cracker crust
  • Sweetened condensed milk
  • Fresh lemon juice
  • Crushed pineapple
  • Maraschino cherries
  • Sweetened flaked coconut 
  • Chopped pecans
  • Cool whip

FAQ ON MILLIONAIRE PIE

1. Do I have to use FRESH lemon juice?  Yes. I can't confirm that the Ph is the same in the fake stuff so I don't know if it will work with the sweetened condensed milk the same way (and thicken properly). Also, it just doesn't taste good.

2. Can I omit the coconut?  Perhaps. I can't say so for certain but it seems to me that the coconut helps support the filling which isn't super firm. If you omit it, wring the pineapple out with a clean dishtowel to ensure ALL excess juice is removed.

3. Why didn't my pie set up?  There are only a few reasons for this recipe to fail. The most important is substituting or omitting the fresh lemon juice and sweetened condensed milk (that combo is what thickens the filling). It's also super important to drain the pineapple VERY WELL and allow the pie to chill a minimum of 6 hours (overnight is best!).

4. Isn't Millionaire Pie supposed to be pink?  The original recipe (from Eagle Brand) did not include cherries. As folks changed the recipe over the years, cherries were added. Some of the newer versions include adding cherry juice which is why some of the pies are pink. You can certainly add cherry juice if you'd like but go easy because the more liquid in the recipe, the looser the filling will be.

5. Can I leave out the cherries?  Yep! As I mentioned in the note above, the original recipe from Eagle Brand did not include cherries.

6. Can I substitute other nuts for the pecans?  Sure! I imagine walnuts and almonds would be lovely in this!

7. Can I leave the nuts out all-together?  I suppose you can but I think the texture adds SO MUCH to this pie and is one of the things that make it so magical.

8. Does this pie freeze well?  YES!! Freeze firm without garnishing or covering the pie. Once frozen, cover well with foil or several layers of plastic wrap then freeze up to 3 months. Defrost in the refrigerator.

9. What's the best way to drain the pineapple?  I usually pour into a colander then let set over a bowl, uncovered, in the fridge overnight. If you don't have time for that, strain it in a colander then pour onto a clean kitchen towel so the towel can absorb the extra juice.

Ingredients

  • 1 deep dish graham cracker crust
  • 1 14-oz can sweetened condensed milk
  • 1/4 cup fresh lemon juice
  • 15-oz can crushed pineapple, well drained
  • 1 cup chopped maraschino cherries
  • 1 cup sweetened flaked coconut
  • 1/2 cup chopped pecans
  • 8-oz tub cool whip, thawed

Instructions

  1. In a large bowl, combine sweetened condensed milk, lemon juice and pineapple then mix well.
  2. Stir in cherries, coconut and pecans.
  3. Fold in cool whip then spoon mixture into graham cracker crust.
  4. Refrigerate 6 hours or overnight.

Notes

  • Drain the pineapple VERY WELL. I usually pour into a colander then let drain into a bowl, uncovered, in the fridge overnight. 
  • Starting with chilled pineapple, lemon juice and cherries helps the pie set up more quickly.
  • I like to drain the cherries on paper towels before chopping.
  • For perfect slices, consider freezing an hour before serving.

Coconut always makes me think of two things: Easter Sunday and Nanny (my paternal grandmother).

Nanny would buy whole coconuts at Eastertime then whittle and extract every last gram of goodness from them.

She'd even save the coconut water when she cracked them open to bake slices of sweet potato in with butter, brown sugar and cinnamon.

She made an assortment of coconut desserts including those green "grass" cupcakes with jelly bean eggs on top, her Italian Bakeless Cake (which was neither Italian or a cake but always my favorite!) and this simple cream pie that's my go-to recipe for Coconut Cream Pie!

She also made a giant 6-layer coconut cake that took days to make. Each layer was painted with a coconut syrup before she layered them between a moist coconut icing then the whole thing was frosted with a thin buttercream.

That's it on the left in the picture below. And yes, that's me trying to snag something sweet off the dessert table when I didn't think anybody was looking. I've heard Pa saved my behind that day and kept my mama and aunts from getting my butt for that!

HOW TO TOAST COCONUT

There are two ways to toast coconut: on the stove and in the oven. I typically use the oven method because the coconut toasts more evenly but either method works! Below are instructions for toasting 2 cups sweetened flaked coconut.

OVEN METHOD: Spread coconut evenly on a large baking sheet then bake at 350 degrees (preheated oven) 8-10 minutes, stopping halfway through to stir the coconut with a spatula. Cool completely before adding to most recipes. 

STOVE-TOP METHOD: Add coconut to a large nonstick skillet then heat and stir over medium heat until evenly toasted. Cool completely before adding to most recipes.

A FEW RECIPE NOTES

  1. Only use Cream of Coconut (not coconut milk or coconut cream).
  2. Feel free to top the pie with whipped cream or additional Cool Whip.
  3. If your pie isn't set after 4-6 hours, freeze for 1 hour to speed up the process.
  4. The texture isn't firm like cheesecake, it's supposed to be a little wiggly. 
  5. The filling can also be used to make 2 smaller pies using standard pie shells (not deep dish).
  6. You don't have to toast the coconut but doing so really brings out the flavor and provides great texture. See the How To section above about toasting coconut if needed.

FAQ ON CREAM OF COCONUT

Can I use Coconut Milk instead of Cream of Coconut?  No, the two are not equivalent. Coconut milk is a thin, unsweetened non-dairy milk (like almond milk), whereas Cream of Coconut is thick and sweetened.

Are Cream of Coconut and Coconut Cream the same thing?  They are not. Coconut Cream is thick and spreadable like butter. It has a similar consistency to vegetable shortening.

Where can I find Cream of Coconut?  Most grocery stores stock it with cocktail mixers (tonic, bloody mary mix, sour mix, etc.) because it's a staple in Pina Coladas and other dreamy libations. Though you may find some shelved with other canned milks or with Indian and Hispanic cuisine ingredients in the grocery store, it will ALWAYS be where the cocktail mixers are.

Is Cream of Coconut supposed to be separated?  The degree to which the creamiest parts rise to the top of the can depends on temperature and how long it has been sitting still. In all such things, cream rises to the top. Shake the can vigorously before opening. If the contents are still separated, it's completely OK and normal (especially in cooler temperatures). Everything will smooth out beautifully once mixed well.

Which brand is best?  I typically use Coco Lopez or Goya.

Ingredients

  • 1 15-oz. can cream of coconut
  • 1/4 cup milk
  • 1 large (5.1 oz) box instant vanilla pudding mix
  • 1 14-oz. can sweetened condensed milk
  • 2 cups sweetened flaked coconut, toasted and divided
  • 1 8-oz tub cool whip, thawed
  • 1 deep dish pie shell

Instructions

  1. Bake and cool pie shell if using pastry-style shell. If using a ready-made (such as graham cracker) proceed to Step 2.
  2. Add cream of coconut to a stand mixer or large bowl (using a hand-held mixer) then mix on medium speed until smooth.
  3. Add milk, pudding mix and sweetened condensed milk then mix until thoroughly combined and smooth.
  4. Fold in a heaping cup of toasted coconut and cool whip then mix until just combined.
  5. Add mixture to pie shell, garnish with remaining toasted coconut then refrigerate for 4-6 hours or overnight.

Notes

  • Use any deep dish pie crust (graham cracker, ready-bake, homemade, etc.). If using a crust that requires baking, bake and cool before filling.

Easy German Chocolate Fudge

Making fudge can be a challenge. I’ve sampled my share of sugar-grit from undercooked fudge and plenty of overcooked chalky fudge too.

A gozillion years ago when I was a teenager I made the recipe on the can of Eagle Brand sweetened condensed milk and haven’t made it any other way since.

It’s the easiest, simplest recipe out there and it’s always perfect because you can’t screw it up. Well, if you cook it way too long you can. But you won’t. It’s obvious when it’s done because it’s done as soon as the chocolate chips melt.

REASONS I LOOOOOVE THIS RECIPE FOR EASY GERMAN CHOCOLATE FUDGE

It's Practical – because the German chocolate filling is between the layers of chocolate fudge instead of on top, the fudge can be stacked which makes it perfect for displaying, storing and/or gifting. 

It's Fool-Proof – by using sweetened condensed milk instead of sugar, we don’t have to worry about reaching the correct temperature (too low and the fudge won’t set, too high and the fudge becomes brittle).

It's Decadently Delicious – there’s a reason gooey, caramelly german chocolate filling gets paired with chocolate: they’re perfect together!

I mentioned this above but I’m VERY MUCH about being practical when I make any recipe, especially sweets. I rarely make cupcakes because they’re a pain to store and transport unless you have a special carrier (I don’t).

I’m not into “special” stuff in the kitchen. I don’t do gadgets. I don’t like trendy appliances.

Whatever the opposite of a hoarder is, that’s what I am. I don’t like stuff. I really don’t like stuff on my counters. And I don’t like my cabinets and drawers filled with specialty items I will rarely use.

I have a crock pot and a stand mixer and… that’s about it. My family is too big for most air-friers (six teens and adults eat a LOT at suppertime) so I just use my convection oven to accomplish the same results. I don’t have an instant pot because I have a pressure cooker.

Uhhhhhh... where was I even going with this??? 

Oh yeah! I’m practical. Which is why I like this recipe because unlike most German chocolate fudge recipes, the filling is on the inside of the fudge, not on top. So I can store, display and/or transport this dreamy fudge easy-peasy because I can layer it or stack it in a container.

This is why I don’t make decorated sugar cookies. Or decorated anything really. I gotta stack it!! In smallish, tidy containers that don’t take up too much space in my life!

A simple, fool-proof recipe for chocolate fudge layered with coconut pecan German chocolate filling made easy with sweetened condensed milk.

Ingredients

  • 3 cups (18 oz.) semi-sweet chocolate chips
  • 1 14-oz can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • German Chocolate Filling (below)
  • 2 tablespoons each coconut and chopped pecans
German Chocolate Filling
  • 1 14-oz can sweetened condensed milk
  • 1/2 cup brown sugar
  • 1/2 cup real butter
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • 1 1/2 cups sweetened flaked coconut
  • 1 1/2 cups finely chopped toasted pecans

Instructions

  1. Line a 9x9 baking dish with wax paper or aluminum foil; set aside.
  2. Prepare German chocolate filling first (see below). While the filling is cooling slightly, make the chocolate fudge.
  3. To make the chocolate fudge, combine one can sweetened condensed milk, chocolate chips and salt in a double boiler. Heat over medium heat just until chocolate is melted, stirring continually (do not overcook – heat only until chocolate melts). Stir in vanilla extract.
  4. Spoon half of the chocolate fudge into the bottom of the prepared pan then spread evenly.
  5. Dollop German chocolate filling on top of chocolate fudge then spread evenly.
  6. Spoon remaining chocolate fudge over German chocolate filling then spread evenly.
  7. Sprinkle coconut and pecans over fudge. Cool to room temperature then cover. Refrigerate fudge one hour OR let set 6-8 hours until completely set.
  8. Remove fudge from pan (lifting up on the wax paper or foil) then cut into 36 squares.
German Chocolate Filling:
  1. Combine sweetened condensed milk, brown sugar, butter, vanilla and salt in a saucepan then heat over medium-high heat until boiling, stirring constantly.
  2. Once boiling, cook and stir for 2 minutes. Remove from heat.
  3. Stir in coconut and pecans. Let mixture cool a bit while preparing the chocolate fudge (no more than 10 minutes).

Notes

  • I really do think you should toast the pecans. This is one of those recipes that's worth the effort because you can really taste the pecans when they're toasted. I just toss mine in the pan I'm going to make the German Chocolate Filling then heat them on the stove until fragrant.
  • You can absolutely toast the coconut too if you'd like.
  • Use salted butter in the German Chocolate Filling or increase the salt to 1/4 teaspoon.

Almond Joy Magic Cookie Bars

The most memorable sweet treat of my childhood was Magic Cookie Bars (aka Hello Dollies and 7-Layer Bars – I’m pretty sure they’re all the same thing or dang near close).

The combo of coconut, chocolate and butterscotch was literally the best thing my childhood self had ever eaten. I can still remember the first time Mama made them and I made myself sick sneaking into the kitchen to swipe just one more taste!

WHAT ARE THE LAYERS IN CLASSIC MAGIC COOKIE BARS?

The original Magic Cookie Bars (a recipe from Eagle Brand Sweetened Condensed Milk) are made of seven layers of the following:

  1. Melted butter
  2. Graham cracker crumbs
  3. Sweetened condensed milk
  4. Butterscotch morsels
  5. Chopped pecans or walnuts
  6. Semi-sweet chocolate chips
  7. Coconut

This recipe has morphed over the years into many variations. Many folks sub peanut butter morsels for the butterscotch (though I could never because I looooooove butterscotch!), some use all chocolate chips (and no other flavor morsels), some omit the coconut, etc.

I’d seen a few recipes for what looked like (what I assumed was) a variation of the original recipe to make Almond Joy Magic Cookie Bars but upon closer inspection discovered that they weren't Magic Cookie Bars at all.

The bottom layer was actually a cookie crust recipe with a lot of ingredients that has to be cooked separately before adding the other layers. Ain’t nobody got time for that.

I didn’t want to do that at all because a) part of the magic of these bars is how quick and easy they are to make and b) magic cookie bars are all about the original seven layers. Soooo… while they look mouth-wateringly delicious, they’re not actually Magic Cookie Bars (Hello Dollies or 7-Layer Bars).

SO! I decided to make my own version of Almond Joy Magic Cookie Bars using the original recipe architecture with these changes.

WHAT ARE THE LAYERS IN ALMOND JOY MAGIC COOKIE BARS?

  1. Melted butter
  2. Regular CHOCOLATE graham cracker crumbs
  3. Sweetened condensed milk

My Lord, these were good! They were even better the next day and I wish I’d waiting until then to take the pictures so the chocolate chips would have looked better for you. They stayed amazing all week, come to think of it! They never dried out or got that stale taste.

Note to self: these have a long shelf-life and will be great for Christmas baking and to make when company’s coming to town.

If you can’t find chocolate graham crackers it’s OK! You can totally use regular graham crackers. You could also add a tablespoon of unsweetened cocoa powder to your regular graham cracker crumbs or you could use chocolate wafers (like Nabisco’s Famous Chocolate Wafers). Don’t use Oreos or another cream-filled chocolate cookie.

You don’t have to use both milk chocolate and semi-sweet chocolate chips. I just did to keep with the 7-layer formula and because I couldn’t decide if all milk chocolate would be too sweet (with the sweetened condensed milk). If you choose to just use one type, I suggest using all semi-sweet.

You’ll want to use sweetened flaked coconut (most commonly available and used in baking recipes), which is different than plain shredded or desiccated coconut. Sweetened flaked coconut is, well, sweetened obviously, but also much moister.

And yep, spellcheck is telling me moister is a word… still not convinced but I’m sticking with it.

Almond Joy Magic Cookie Bars

A true spin on the original classic recipe for Seven Layer Hello Dolly Magic Cookie Bars (or whatever your family calls them!) with almonds, chocolate chips, coconut and chocolate graham cracker crumbs that Almond Joy fans will love!

Ingredients

  • 1/2 cup butter, melted (1 stick)
  • 1 1/2 cups chocolate graham cracker crumbs
  • 1 cup milk chocolate chips
  • 1 14-oz can sweetened condensed milk
  • 2 cups sweetened flaked coconut
  • 1 cup semi-sweet chocolate chips
  • 1 cup sliced almonds

Instructions

  1. Spray the sides of a 13x9 pan with cooking spray and preheat oven to 350 degrees.
  2. Pour melted butter into prepared pan then swirl to spread butter evenly over the bottom.
  3. Sprinkle chocolate graham cracker crumbs evenly over butter then flatten evenly over the bottom of the pan to make a bottom crust.
  4. Sprinkle milk chocolate chips over bottom crust.
  5. Drizzle sweetened condensed milk over milk chocolate chips. This isn’t the traditional order of things but this makes the bottom layer extra chocolatey.
  6. Sprinkle coconut over sweetened condensed milk.
  7. Sprinkle semi-sweet chocolate chips and sliced almonds evenly over coconut.
  8. Cover pan with aluminum foil then bake, covered, for 20 minutes. Remove aluminum foil then continue baking for 5-10 minutes or just until coconut starts to brown.
  9. Cool in the pan then cut into squares. Store in an air-tight container at room temperature up to one week.

Notes

  • As with all my recipes, use real salted butter. If using unsalted butter, add 1/4 teaspoon salt.
  • One traditional-size sleeve of graham crackers yields 1 1/2 cups crumbs.
  • It is perfectly fine to use all semi-sweet chocolate chips instead of half milk chocolate (or vice versa).
  • One 12-oz package chocolate chips yields 2 cups.
  • Don’t pack the coconut when measuring – we’re just looking for 2 loose-ish cups.
  • I have heard that fat-free sweetened condensed milk can be used in Magic Cookie Bar recipes but I’ve never tried it myself.
