I’m a baseball mom.

A big, loud, green-and-gold-wearing, sweaty, cooler-toting, baseball-pants-scrubbing, whooping, hollering baseball mama.

Brutus made the all-star team so we’ve been practicing practically every day and have already played two tournaments (won them both thankyouverymuch and now we’re headed to State – holla!)

We are living, eating and breathing baseball right now. My laundry is piled up, the house is a wreck, I haven’t cooked a good supper in weeks and I might be growing the cure for cancer in my master shower.

I haven’t made y’all anything in weeks! So guess what Mama did? She made these and called me to come take pictures and get the recipe for the blog.

I mean seriously, is that awesome or what?!

She’s got it bad too, though. Some grandparents skip games or only show up to make an appearance. My folks are big, loud, green-and-gold-wearing, sweaty, cooler-toting, whooping, hollering baseball grandparents. And they love it!

Cherry Cheese Danish Bars


Cherry Cheese Danish Bars

A recipe for tender butter crumb bars with cherries and cream cheese in the middle - just like a cheese danish!

ingredients:

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup butter, at room temperature
  • 2 1/4 cups sugar, divided
  • 5 eggs, divided
  • 1 teaspoon vanilla extract
  • 2 cans cherry pie filling
  • 1 8-oz. package cream cheese, at room temperature
  • 1 cup powdered sugar
  • 1/2 teaspoon almond extract
  • 2-3 tablespoons milk

instructions:

How to cook Cherry Cheese Danish Bars

  1. Combine flour, baking powder and salt in a medium bowl and stir to incorporate; set aside.
  2. Cream butter and 2 cups sugar for two minutes with an electric mixer. Add 4 eggs and vanilla extract and mix until combined. Gradually add flour mixture and mix until all ingredients are incorporated to form a dough.
  3. Grease a 15x10x1 pan then press half of the dough into the bottom of the pan. Cover with wax or parchment paper then use your hands to spread the dough evenly if desired.
  4. Combine cream cheese, remaining egg and 1/4 cup sugar and beat with an electric mixer until smooth. Spread cream cheese mixture over dough. Spread cherry pie filling over cream cheese mixture.
  5. Top cherries with remaining dough by evenly dolloping on small spoonfuls until all dough is used. Bake at 350 degrees for 35-45 minutes or until dough is golden brown. Cool completely.
  6. Combine powdered sugar, almond extract and milk to make a glaze (start with 2 tablespoons milk and add more if necessary to make the glaze thin enough to pour. Drizzle glaze over bars then cut into squares. Store at room temperature in an air-tight container.

If you’re anything like me, every time you hop on your favorite social media sites, you see lots of yummy food pics and recipes.

I think I probably see more than the average bear because so many of my buds are food bloggers and foodies in general so I might be somewhat immune to all the food pics.

So when something jumps up and grabs my attention, that’s really saying something.

And that’s exactly what happened the other day when these babies popped up in my news feed! My buddy, Kris, from Big Rigs ‘n Lil Cookies posted a photo and I was immediately intrigued.

And then when I saw the recipe I was even more interested because I’d never seen anything like it.

At first I thought they were called ‘Man Bars’ because men must like them but now that I’ve made them I think they’re called that because they’re so easy, even a man can make them.

HAHA!! Stop. Don’t send me hate mail. I’m kidding. Mostly.

FIVE REASONS TO TRY MAN BARS

1 - They’re crazy easy to make and only have a few ingredients.

2 - They travel REALLY well. Unlike frosted treats, these can be stacked (and stacked and stacked) and they won’t stick to each other or the container. I just toss them all in a lidded plastic container and hit the road. 

3 - They’re not overly sweet. No, seriously, they’re not. I know it seems they would be, especially since they’re rolled in powdered sugar, but there’s a WHOLE box of graham crackers in one batch plus a full cup of finely chopped pecans.

4 - Everyone I’ve served these to LOVES them.

5 - They’re just so different! Everyone always gravitates to them because they’re unique. Have the recipe handy because everyone will ask!

NOTES ON MAKING MAN BARS

  • Use good quality, traditional graham crackers. One of the things I like most about these is the flavor from the graham crackers. I typically use Nabisco Grahams (in the red box).
  • I wouldn’t recommend using cinnamon or chocolate graham crackers. The cinnamon will compete with the other flavors and the chocolate won’t provide enough contrast in flavor. 
  • This recipe can be halved and cooked in an 8x8 or 9x9 pan.
  • The batter is THICK and STICKY. I blop big spoonsful evenly in the pan then use a rubber spatula to smoosh it down flat. You can also lay a piece of wax paper over the mixture then use your hands to press and spread (letting the wax paper act as a barrier between the mixture and your hands).
  • You’ll need to line the pan so you can easily remove the baked slab then cut into squares.
  • The easiest (and cleanest) way to roll the bars in powdered sugar is to place the sugar in a lidded plastic container or gallon-sized zip-top bag, add a few bars, then gently shake and toss the bars around in the sugar.

An easy and unique cookie bar recipe made with graham cracker crumbs, sweetened condensed milk and chocolate chips, cut and rolled in powdered sugar.

Ingredients

  • 1 14-oz box graham crackers, crushed into crumbs
  • 1 12-oz bag semi-sweet chocolate chips
  • 1 cup finely chopped walnuts or pecans
  • 2 14-oz cans sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 2-3 cups powdered sugar

Instructions

  1. Preheat oven to 350 degrees. Line a 13x9 baking pan with parchment paper or aluminum foil then spray with cooking spray.
  2. Combine graham cracker crumbs, chocolate chips, nuts, condensed milk, vanilla and salt in a large bowl and mix until well combined to make a batter. TIP: Use a stand mixer with paddle attachment if possible because batter will be THICK.
  3. Spread batter into pan then bake at 350 degrees for 30 minutes or until set.
  4. Cool completely in pan, remove then cut into squares.
  5. Roll/toss squares in powdered sugar until nicely coated. Store at room temperature in an air-tight container up to one week.

If y’all follow me on Instagram you might have caught this already but ol’ Brutus made the all-star baseball team! We’re crazy excited!

We’ve been practicing like mad so it’s been hard to eat good home-cooked meals and make new stuff for the blog.

Since we’re practically living at the ball field now I decided to take the blog to practice :)

We have a really nice ball park which has a huge grill for members. I suggested we have a cookout and everyone pitched in to bring stuff.

Side note: you know you're in the South when the baseball park has a barbeque grill big enough to cook a hog on.

I’d concocted this marinade for chicken a month or so ago and we just fell in love with it so I figured it would be great if we marinated chicken thighs in it, grilled them up and made super simple chicken sandwiches. And that’s exactly what we did!

I like using thighs over breasts because you just about can’t overcook them. They stay moist and juicy and have so much more flavor. But since I know somebody’s going to ask anyway, yes, you can use breasts.

They just won’t be as good.

Hmmph.

You can serve the grilled chicken as-is or make sandwiches. I think this is a great alternative to grilling burgers and hotdogs if you have a crowd to feed. The way we served these was just on a simple buttered bun with a drizzle of Cajun White Barbeque Sauce (recipe below).

I like a few slices of dill pickle on the bottom too but other than that, I don't serve anything extra with the sandwiches. It's like eating a Chick-fil-A sandwich - simple bet perfectly delicious!

And unlike with burgers you don't need to buy and prep a wagon-load of condiments and extras like lettuce, tomatoes, onions, cheese, mayo, mustard, ketchup, etc.

I got distracted and didn’t take a photo of this as a sandwich OR with the Cajun White Barbeque Sauce on top but these photos will show you what the chicken looked like when it came off the grill.

And I’d like to go on the record and tell you our third baseman, Cat Daddy, ate two of these and told me they were “seriously really delicious good!”

That’s a pretty heavy compliment coming from an 8-year old ;)

Ingredients

Chicken & Marinade
  • 8-10 boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup worcestershire sauce
  • 1/2 cup dijon mustard
  • 1/4 cup brown sugar
  • 3 tablespoons vegetable oil
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
Cajun White Barbeque Sauce
  • 1 1/2 cups mayonnaise
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper

Instructions

Chicken & Marinade
  1. Trim any excess fat from chicken then add to a gallon-sized zip-top back or lidded container.
  2. Combine remaining ingredients then mix well to make a marinade. Pour marinade over chicken. Seal bag then refrigerate 6-8 hours or overnight.
  3. Drain marinade and discard. Grill chicken over medium heat for 20-30 minutes or until cooked through.
  4. Serve as-is or on buttered buns with Cajun White Barbeque Sauce.
Cajun White Barbeque Sauce
  1. Combine all ingredients then refrigerate until ready to serve. Refrigerate to store up to 2 weeks.

Notes

You can use chicken breasts but they won't be as juicy and tender as thighs.
