One-Bowl Chewy Chocolate Cookies

You know that corner piece of the pan of brownies that everybody fights for? The one that has the lacy, chewy, crackly edges that makes for the perfect bite because it’s nuzzled up next to the fudgy, pillowy soft part of the brownie?

That’s exactly how I describe these cookies! It’s like getting the perfect bite of brownie in a whole cookie!

These are fudgy and chewy and crispy and tender all at the same time! The chocolate dial is set to 10 but perfectly balanced by the condensed milk. I could eat a dozen of these in one sitting!

I got this recipe from Mama who got it from a friend so I have no idea what the origin of the cookies is. On her friend’s hand-written recipe card, they’re just called Chocolate Cookies so I wasn’t sure what to call these.

Just “Chocolate Cookies” isn’t much of a descriptive name and doesn’t really do much to explain what’s so great about these. I thought about it for days and it came up with several names but in the end, I decided on One-Bowl Chewy Chocolate Cookies.

I think the sweetened condensed milk is what gives these cookies their chewy texture and what makes the recipe so easy! I considered calling them Sweetened Condensed Milk Chocolate Cookies but, Lord, that’s a mouthful!

NOTES ON MAKING ONE-BOWL CHEWY CHOCOLATE COOKIES

  • If your dough is hot, the cookies will naturally flatten and spread a bit when you portion the dough out onto the pan (this is good - this is what you want). If the dough has cooled, the cookie portions will remain in a firmer "ball-like" shape, so you will want to spread/flatten them out a bit for cookies that look like the ones pictured here.
  • I prefer pecans in this recipe but almonds or walnuts would be delicious too!
  • Substitute SR flour with 1 cup AP flour, 1.5 teaspoons baking powder and 1/4 teaspoon salt (total salt for recipe will be 1/2 teaspoon).
  • Bake cookies on the center rack, one pan at a time OR bake on two racks on convection mode set to 325 degrees.

One-Bowl Chewy Chocolate Cookies

One-Bowl Chewy Chocolate Cookies

Ingredients

  • 1 12-oz bag semi-sweet chocolate chips
  • 1 14-oz can sweetened condensed milk
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • 1 cup self-rising flour
  • 1 teaspoon vanilla extract
  • 1.5 cups finely chopped nuts

Instructions

  1. Line two cookie sheets with parchment paper (or coat with cooking spray). Preheat oven to 350 degrees.
  2. Melt and stir chocolate chips, sweetened condensed milk and butter (either in a glass mixing bowl in the microwave or in the bowl of a double boiler) until completely smooth, stopping and stirring every 30 seconds if using microwave.
  3. Stir in salt, flour, vanilla and pecans. Mix until well combined then drop dough by rounded tablespoons (or portion with a 1.5-inch cookie scoop) onto the prepared baking sheets, leaving 2 inches between cookies.
  4. Bake for 7-9 minutes or until the edges are set but the centers are still slightly soft. Cool on baking sheets for 5 minutes then remove to cool completely.

  • I *think* you could make these without nuts but I've never tested the recipe without. Since there isn't much flour in these, the nuts may be needed for body and structure.

  4. I don't know what happened with these cookies but they look nothing like the picture! Did not spread at all. Just a round ball.

    1. Hmmm... I don't know. The only thing I could think would be your batter was cooler than mine so the cookies held their shape more? Or maybe I stir mine longer so the batter was more pliable? There's an almost identical recipe online from RecipeGirl called 7 Minute Cookies and I notice that her cookies are rounded as well.

  5. I made these a couple of days ago and they were delicious. I did bake mine about 9 minutes. My husband and a friend at work thought they were a little too rich in chocolate (gasp!) but I love them. We tried them with a scoop of Blue Bell vanilla ice cream and that made the perfect combination. Love that it's one bowl and love that it's all ingredients I keep on hand. Thanks for another great recipe!

  6. Made these yesterday and didn't tell hubby what they were. When he tasted one he said, "This is like eating the corner of the brownie pan!!" We're thinking of making ice cream sandwiches with them tonight :0)

Hi there! While I’m not able to respond to every comment, I try hard to answer any questions that haven’t been addressed in the post, recipe or in other comments.

I can tell you now 1) I have no idea if you can substitute Minute Rice or brown rice in my recipes because I’ve never used them and 2) If I know how to convert a recipe to a Crock Pot version, I will make a note about it (otherwise, I don’t know).
