Chocolate Peanut Butter Oatmeal Bars

Also known as Oatmeal Dream Bars, this easy recipe features a peanut butter fudge layer between an oatmeal cookie base studded with chocolate chips on top. Top with M&Ms for fun or a special holiday treat!

Before I tell you how to make these, look at the picture. Do you see that layer of peanut butter goodness? Do you SEE that?! That, my friends, is where the money’s at.

I came across a recipe on Pinterest and just knew I had to make it. What really caught my attention was the peanut butter layer… wait.

Go look again. Look at it!

Sweet Sunday morning, that’s pretty isn't it? OK, where was I? I have found several recipes for this online and they all seem to be a little different. I can tell you this, though, I will be implementing that peanut butter layer – look at it! – in many, many more cookie bar recipes to come.

I made these to give Husband a break from coconut and pecans since just about every single sweet recipe I have has one or the other in it. But, for the record, I think these would be amazing with both!

Use holiday M&Ms in place of or along side the chocolate chips to dress these up for Christmas, Easter, Valentine's Day and whichever special day you're baking for or use traditional M&M's just for fun (sort of a monster cookie bar!)

Chocolate Peanut Butter Oatmeal Bars

Chocolate Peanut Butter Oatmeal Bars

Ingredients

  • 1 cup butter (2 sticks), melted
  • 1 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 2 1/4 cups quick-cooking oats
  • 1 14-ounce can sweetened condensed milk
  • 1/2 cup creamy peanut butter
  • 1 12-oz package semi-sweet chocolate chips

Instructions

  1. Line a 13x9 baking pan with aluminum foil then spray with cooking spray; set aside. Preheat oven to 350 degrees.
  2. Combine butter, brown sugar, baking soda and salt in a large bowl and mix with an electric mixer on low speed until smooth. Add flour and oats then continue mixing until well combined. Reserve 1 heaping cup oat mixture for later use.
  3. Press the remaining oat mixture into the bottom of the prepared pan. Bake at 350 degrees for 10 minutes.
  4. Combine peanut butter and sweetened condensed milk then mix until smooth. Pour peanut butter mixture over semi-cooked oat crust and carefully spread evenly over crust.
  5. Crumble half of the reserved oat mixture over peanut butter mixture. Top with chocolate chips then crumble the remaining oat mixture on top of the chocolate chips. Continue baking for 25 minutes or until oat crumbles start to brown.
  6. Cool completely in pan then remove by lifting up on aluminum foil. Cut into bars and store in an air-tight container.

  1. Made these tonight with my daughter and....OH....MY....GOODNESS!!!! They are just awesome!! Thank you soo much for sharing this recipe! It's definitely a keeper :)

  2. Made these almost exactly as recipe but not a fan of SCM so made my peanut butter layer with corn syrup, sugar and peanut butter heated on the stove - delicious!!

Hi there! While I’m not able to respond to every comment, I try hard to answer any questions that haven’t been addressed in the post, recipe or in other comments.

I can tell you now 1) I have no idea if you can substitute Minute Rice or brown rice in my recipes because I’ve never used them and 2) If I know how to convert a recipe to a Crock Pot version, I will make a note about it (otherwise, I don’t know).
