A funny thing happened when I fixed some dried butterbeans for a nephew who had moved here from Illinois. Completely foreign to him but he loved them (who wouldn't). He even asked me how to make them and I told him. Then he asked me when I added the gravy. What gravy? He meant the creamy texture of the beans after they cooked down. He thought it was gravy! She prepared them exactly like you described then added more lquid and dumplings. Butterbeans and peas almost always had dumplings. Oh how I love them with or without the dumplings. This time of year we have fresh sliced tomatoes and tall glass of sweet tea on the side. Thank you for sharing this recipe. I live in SE Ohio and have always called them baby limas when fresh or frozen and then when dried they become butter beans.
