I *think* it's cheddar and the name refers to how aged it is. The taste is very similar to traditional American cheese. I hope that helps! I'm in Canada and have never come across...Hello<br />I'm in Canada and have never come across American white cheese in my local grocery stores or independent cheese shops. Could you give me an idea of the texture and taste of your American white cheddar?
