I've never had much luck layering casseroles as they tend to be a bit dry, so I just mix things up. Second, I never use totally raw potatoes in casseroles. I'll cook hasbrowns completely for added flavor, but here I just zapped the potatoes in the microwave for a few minutes to partially cook them. It reduces the cooking time & I never end up with undercooked potatoes. It would be helpful to give a weight when your recipes call for whole potatoes, since the amount could vary greatly from cook to cook. I cooked the potatoes an extra 40 minutes during the first cooking period. After completing the 2 additional cooking periods some of the potatoes are still hard and not completely cooked. The potatoes need to be partially pre-cooked or the cooking time needs to be increased dramatically. Just combine your potatoes and seasonings in a microwave safe bowl with a small amount of butter, oil or oil based dressing, depending on your recipe, cover and microwave for approx. 6-8 minutes (depends on the amount of potatoes in your recipe). When timer goes off, let them set covered for approx. 2 minutes and then continue on with making your dish.
