Our house used to be the default party house. Husband and I both love to entertain and we have a pretty cool backyard for kids (pool, basketball, trampoline, cornhole, etc.) so everyone always seemed to land at our house on the weekends.

And we loved it!

But as our kids have gotten more involved with their sports and we continue to work full-time AND on part-time ventures (like this here ol’ recipe blog), we just don’t have the time to do the stuff we once did.

I am constantly telling my friends that we haven’t ditched them - I still love you, I promise I do! - we literally don’t have time to have people over like we used to.

Which leads me to my new suppertime go-to these days: the casserole.

I know people have been enjoying casseroles for decades (myself included!) but I have really been putting them to work lately!

When we do have some downtime, we have to play catch-up with the yard work and housework (and grocery shopping and laundry and school work and and and…) so getting a homemade supper on the table can be challenging.

I know most of you are nodding your head thinking, gurl, you're preaching to the choir.

While I love to spend hours in the kitchen loving on recipes and creating 4-5 dishes for one meal, I most often do NOT have time to do that.

So instead, I assemble everything for a good casserole, toss it in the oven and carry on with the 40’leven things I have to get done every day.

My brood loves anything with a ‘meat and potato’ backbone and they especially love anything with ground beef so I took one of my favorite recipes, Super Easy Cheesy Scalloped Potatoes, added some onion and hamburger and called ‘er done!

The kiddos scarfed this down and I enjoyed the leftovers for lunch throughout the following week. The leftovers heat up beautifully!

An easy casserole recipe with ground beef, cheese and potatoes like a meaty potatoes au gratin or cheesy scalloped potatoes with hamburger.

Ingredients

  • 1 pound ground beef
  • 1 onion, finely diced
  • 4 pounds potatoes, peeled
  • Salt and pepper
  • 8 ounces cheddar cheese, shredded (about 2 cups)
  • 1 10.75-oz can condensed Cheddar Cheese soup
  • 1 12-oz can evaporated milk
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Spray a 13x9 baking dish with cooking spray and preheat oven to 375 degrees.
  2. Add ground beef and onion to a large skillet, season with salt and pepper then cook until ground beef is cooked though and crumbled. Drain fat then set aside.
  3. Cut potatoes into thin slices (less than 1/4 inch). Add one layer of potato slices to the bottom of the baking dish. Sprinkle potatoes with salt and pepper.
  4. Top potatoes with 1/4 of beef mixture. Top beef with 1/4 of shredded cheese. Repeat this process three more times.
  5. Combine condensed cheddar soup, evaporated milk, milk, salt and pepper then whisk until smooth. Pour mixture over potato/beef/cheese layers.
  6. Cover dish tightly with aluminum foil then bake at 375 degrees for one hour. Remove foil then continue baking for an additional 15 minutes or until potatoes are tender and dish is light golden brown and bubbly.

Notes

  • If potatoes aren’t tender after total baking time, cover dish with aluminum foil and continue baking until potatoes are tender.
  • Don’t use the reduced calorie/fat condensed soup in this recipe. I tried it once and the dish was dry and not as creamy.

  3. I made this & the recipe is a good base, but even as one who likes food simple, I knew it needed punching up. I added 2 oz. of bacon crumbles & another 1/2 lb. of ground beef. I put in a teaspoon each of granulated garlic & McCormick's hamburger seasoning. Also, in dishes like this I par-bake (or par-zap!) the bakers to ensure they will be tender. It also cuts down on the cooking time.

    1. Do you have other condensed soups like Cream of Mushroom? If so, use one of those :o)

    3. You can use maybe cream of chicken or cream of mushroom and just add cheddar cheese

    4. Cream of broccoli or cream of chicken or cream of celery. I like to see what my store offers then decide what cream of _____ I want to use.

    5. Instead of any cream of "something" soup I would make a simple "roux", aka white sauce and add in some shredded extra old white cheddar. Also a dash of cayenne pepper in the white sauce would give it a little extra kick and add flavour to the casserole.

  8. Excellent casserole. I drained a can of French cut green beans and added to one of the layers and sprinkled bacon bits on top. Delicious! My husband requests this dish frequently.

  12. I have made this several times. We love it. I added extra onions and I put garlic and Weber's hamburger seasoning for the grille. I also used canned sliced potatoes and I don't have to peel and slice potatoes. Turned out wonderful and u would never know the potatoes were canned.

    1. I'll bet it would be easily adaptable to a slow cooker. But how long it would take would be anyone's guess.

On instruction #4 where you say pour the soup mixture over the potatoes, beef, and cheese layers do you mean pour the soup mixture over the entire dish at once? or pour it in between each individual layer ( like cheese, soup mix, potatoes, soup mix, beef, soup mix..) or layer all and pour and repeat? like this..

  17. I made it twice in the morning or evening before and the potatoes do give out a lot of liquid but still delicious this way! My husband couldn’t tell a difference from fresh vs ahead. I haven’t tried freezing :)

  18. I made a modified version of this. I used a little less potato (I eye-balled about 3 to 3.5 lbs of potato and used 2.5 lbs ground beef. Little bit extra cheese. Turned out great!

  19. I just made this last night. I omitted the cheddar cheese soup cause we didn't have any and it still came out super creamy and so good! This is definitely going to be a repeat dinner!

  22. Quarantined and no evaporated milk - has anyone just used regular milk? I looked into making my own, but don't want to risk wasting it if it doesn't turn out. Thank yoU!

    Tries this dish , very tasty, granddaughter approved. In stead of the onion used a 1/4 teaspoon of onion powder. I also substituted the cheese soup for cream of chicken soup. Turned out great.

    1. I just commented that my daughter has Celiac and cannot have the cheese soup as it has wheat in it. I had wondered about a substitute for that, and you answered my question! Will get some of that and try it next time with the cream of chicken - good to hear that worked well. thanks!

  28. There is no way 4 pounds of thinly sliced potatoes, single layered, and all the other ingredients, fit in a 9 x 13 pan.
    I barely got 2 1/2 pounds in.
    It's in the oven now.
    I hope the lack of 1 1/2 pounds of potatoes isn't going to make the casserole watery.

  30. Wow, this was great! I did add some additional seasonings in the beef like hamburger seasoning and beef bouillon granules. My kids went insane for this and there was no leftovers. To quote my 12 year old son "Mom, this was literally the best thing you ever made!"

  31. Making this tonight, but didn't add the cheddar cheese condensed soup as all I could find had wheat in it, and my daughter has Celiac disease (gluten allergy, not just intolerance). I decided to put in some cream cheese instead for some added richness. Wondering if you can recommend anything else as a substitute? I considered cream of chicken but decided against that... since it's my first time making this. Regardless, this looks delicious and the family can't wait to chow down!

  33. This is covered with foil and ready to pop in my oven in a while! I forgot to sprinkle the shredded cheese between the layers. DOH! But I put the cheese on top and I'm sure it'll be great. I think my family will love it on this cold Colorado day!

      Your oven may need calibrating. However, I stated a couple of years ago that I first microwave the potatoes for a while to help speed up the cooking time.

  36. Best casserole I’ve ever made/had! My alterations were that I doubled the recipe used a bag of frozen cubed hashbrowns with onions and peppers and a bag of frozen waffle fries (because I didn’t want to peel and par boil russets). I seasoned the meat and onions with granulated garlic, onion powder and Steakburger seasoning, and I used two cans of mushroom soup and evaporated milk. I laid down the waffle fries first, layered half the meat on, sprinkled half a can of corn, about 1 cup of Colby Jack cheese and half the soup/milk mixture then did it all again. I baked it uncovered for one hour then let it rest for 15 minutes. Perfection!
