Even though this recipe is made with such simple, basic ingredients, I always mutter the same thing under my breath when I take it out of the oven..."ohhh my..."
Something this rustic shouldn't be so gorgeous. Something this easy shouldn't be so delicious!
Who knew a few potatoes, some ground beef and a half-dozen of eggs could put on such a show?! Well, I do now and that's why I serve this every chance I get - especially when we have overnight guests!
The egg whites sort of hold onto some of the hash so the servings lift out in these nice little bundles and the yolks are rich and silky and just coat everything perfectly!
Making a big breakfast usually destroys my kitchen but not with this dish! Everything cooks in one pan and while the eggs are finishing in the oven, I tidy up what little mess there is and I'm ready to take on the rest of my day!
I usually just serve this with toast (and screaming hot coffee). I've made biscuits with this before but something about that crusty toast is just so perfect with this recipe.
HOW TO MAKE HASH & EGGS WITH GROUND BEEF

- Cook ground beef, onion, potatoes, S&P over HIGH heat until beef is no longer pink.
- Add remaining seasonings, reduce to MEDIUM heat then cook about 10 minutes or until potatoes are tender. They'll cook in the pan juices from the beef.
- Using the back of a spoon, make indentations in the hash for the eggs.
- Break one egg into each indentation then cook on the stove a few minutes.
- Move skillet to the oven for the eggs to finish cooking. That's it!
FAQ ON HASH & EGGS WITH GROUND BEEF
Can I use sausage instead? Yes (though I like ground beef better) but you'll need to reduce the salt and seasonings by half.
Should I use lean ground beef? I think this is best with an 80/20 or 90/10 mix. We need some fat and flavor to make the potatoes extra delicious!
Which type of potatoes work best? Any type of potato will work. Waxier potatoes like Yukon Gold and red potatoes will keep their shape better but any potatoes can be used.
Do I have to use a cast iron skillet? Nah. Cast iron is perfect for dishes that finish in the oven but any WIDE (12-14 inch bottom) oven-safe skillet will work.
Can I put ketchup on it? If you want to!! I'm not a ketchup gal but I sure hit mine with a little hot sauce when I plate it!

Hash & Eggs with Ground Beef

A simple, rustic one-pan recipe with fresh eggs baked into a hash of ground beef, onions and diced potatoes perfect for breakfast or brunch.
Ingredients
- 1 lb ground beef
- 1 large onion, diced
- 3 medium potatoes (2.5 cups diced small)
- 1.5 teaspoons salt
- 1.5 teaspoons pepper
- 1 teaspoon garlic powder
- 1 teaspoon worcestershire sauce
- 1 teaspoon paprika
- 1 teaspoon parsley (optional)
- 6 large eggs
Instructions
- Preheat oven to 350 degrees.
- Heat a large cast iron skillet (or other oven safe skillet) over high heat. Add ground beef, onion, potatoes, salt and pepper and cook, stirring frequently, until beef is no longer pink.
- Reduce heat to medium, add garlic powder, worcestershire sauce, paprika and parsley then continue cooking 8-10 minutes or until potatoes are tender.
- Reduce heat to medium-low. Using the back of a spoon, make 6 indentations in the hash. Don’t go all the way to the bottom of the pan, just make a little well large enough to cradle the eggs.
- Break one egg into each indentation. Season eggs with additional salt and pepper. Cook on stove until whites are mostly set and only partially translucent. This extended cooking on the stove also helps create a crispy texture on the meat and potatoes.
- Carefully move skillet to oven then bake at 350 degrees for 4-7 minutes or until whites are cooked through and yolks are cooked to preference.
Notes
- Dice the potatoes into very small cubes to reduce cooking time.
- I don't typically peel the potatoes but you can if you prefer.

please whats an alternative for worcester sauce?
ReplyDeleteIf you "Google" or do a web search for Worcestershire Sauce alternative you will see many options. Difficult to substitute for I think. You could also just leave it out or spice meat however you like it.

ReplyDeleteHmmm... yes, I think so. I'd add a little fat (bacon grease or vegetable oil). You'll also need to add a little water to help cook the potatoes since it won't be getting any moisture from the ground beef. The worcestershire would be up to you. I'd probably leave it in.
DeleteVery good. Big hit with my wife and kids. I had to add a little extra seasoning and I threw some dried herbs in as well (including ground savory which I thought paired pretty well with it). Also, I would recommend just frying up some eggs and throwing them on top of the individual servings if you want the yolk nice and runny. Enough time in the oven to finish off the whites meant solid yolks. Not as good. More time on the stove might have solved this but would've burned the other ingredients.

ReplyDeleteInstead of putting in the oven to cook the eggs,put a lid over the pan. Cook until the whites are set for runny yolks or longer if you like your yolks cooked.
