Fudge Stuffed Chocolate Chip Cookie Bars

An easy bar recipe with chocolate chip cookie dough swirled with a fudgy chocolate layer. 


My local grocery store had refrigerated cookie dough on sale buy-one-get-one-free a few weeks ago so I grabbed a couple rolls.

Side note on ready-made cookie dough... I'm a cook. I'm a pretty good cook. I kinda do it for a living. But Ima tell you what... it might not be as good as homemade but you can't make chocolate chip cookie dough cheaper than you can buy it.

I felt a little guilty using it for Angel Baby's last bake sale but man, dang, it's so cheap! I knew there'd be some moms rolling their eyes at me for not making something fabulous and from scratch but... I don't lose much sleep over crap like that.

Anywho, I had these two rolls of cookie dough leftover in the fridge and was wanting to do something with them. As I mentioned in my last post, we're snowed in right now and I'm climbing the walls! Everybody here has cabin fever and they're driving me ca-ray-zee! I needed something to do!

I spied a can of sweetened condensed milk and chocolate chips and thought of a recipe I'd seen on the Nestle website (or maybe it was Pillsbury?). I didn't bother looking it up because I was pretty sure I knew the crux of it and I know how to make fudge with sweetened condensed milk.

Here's what I threw together and they are insane! They're super rich so grab a big ol' glass of milk before you bite into one!

ingredients:

  • 2 16.5-ounce rolls refrigerated chocolate chip cookie dough
  • 1 14-ounce can sweetened condensed milk
  • 1 12-ounce package semi-sweet chocolate chips
  • 2 tablespoons butter
  • Pinch of salt

How to cook Fudge Stuffed Chocolate Chip Cookie Bars

  1. Set cookie dough out at room temperature for about 15 minutes to soften up a little. Spray a 13x9 baking pan with cooking spray; set aside.
  2. Meanwhile, mix sweetened condensed milk, chocolate chips, butter and salt in a pan over medium heat until chips are melted and mixture is smooth. Remove from heat, stirring occasionally until ready to use.
  3. Press one roll and 1/3 of the other roll of the chocolate chip cookie dough into the bottom of the baking pan. I laid a sheet of waxed paper over the dough then pressed the dough down with my hands to make quick work of this step. Pour chocolate mixture over cookie dough and spread evenly.
  4. Using your fingers, pinch off small dollops of remaining cookie dough and drop evenly on top of chocolate mixture.
  5. Bake at 350 degrees for 20 minutes or until cookie dough is lightly browned.
  6. Cool completely in pan then cut into squares. Store, covered, at room temperature.

NOTES:

I bet these would be awesome with peanut butter cookie dough too!

Hi there! While I’m not able to respond to every comment, I try hard to answer any questions that haven’t been addressed in the post, recipe or in other comments.

I can tell you now 1) I have no idea if you can substitute Minute Rice or brown rice in my recipes because I’ve never used them and 2) If I know how to convert a recipe to a Crock Pot version, I will make a note about it (otherwise, I don’t know).
