If y’all follow me on Instagram you might have caught this already but ol’ Brutus made the all-star baseball team! We’re crazy excited!

We’ve been practicing like mad so it’s been hard to eat good home-cooked meals and make new stuff for the blog.

Since we’re practically living at the ball field now I decided to take the blog to practice :)

We have a really nice ball park which has a huge grill for members. I suggested we have a cookout and everyone pitched in to bring stuff.

Side note: you know you're in the South when the baseball park has a barbeque grill big enough to cook a hog on.

I’d concocted this marinade for chicken a month or so ago and we just fell in love with it so I figured it would be great if we marinated chicken thighs in it, grilled them up and made super simple chicken sandwiches. And that’s exactly what we did!

I like using thighs over breasts because you just about can’t overcook them. They stay moist and juicy and have so much more flavor. But since I know somebody’s going to ask anyway, yes, you can use breasts.

They just won’t be as good.

Hmmph.

You can serve the grilled chicken as-is or make sandwiches. I think this is a great alternative to grilling burgers and hotdogs if you have a crowd to feed. The way we served these was just on a simple buttered bun with a drizzle of Cajun White Barbeque Sauce (recipe below).

I like a few slices of dill pickle on the bottom too but other than that, I don't serve anything extra with the sandwiches. It's like eating a Chick-fil-A sandwich - simple bet perfectly delicious!

And unlike with burgers you don't need to buy and prep a wagon-load of condiments and extras like lettuce, tomatoes, onions, cheese, mayo, mustard, ketchup, etc.

I got distracted and didn’t take a photo of this as a sandwich OR with the Cajun White Barbeque Sauce on top but these photos will show you what the chicken looked like when it came off the grill.

And I’d like to go on the record and tell you our third baseman, Cat Daddy, ate two of these and told me they were “seriously really delicious good!”

That’s a pretty heavy compliment coming from an 8-year old ;)

Recipe for All-Star Grilled Chicken Marinade

Ingredients

Chicken & Marinade
  • 8-10 boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup worcestershire sauce
  • 1/2 cup dijon mustard
  • 1/4 cup brown sugar
  • 3 tablespoons vegetable oil
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
Cajun White Barbeque Sauce
  • 1 1/2 cups mayonnaise
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper

Instructions

Chicken & Marinade
  1. Trim any excess fat from chicken then add to a gallon-sized zip-top back or lidded container.
  2. Combine remaining ingredients then mix well to make a marinade. Pour marinade over chicken. Seal bag then refrigerate 6-8 hours or overnight.
  3. Drain marinade and discard. Grill chicken over medium heat for 20-30 minutes or until cooked through.
  4. Serve as-is or on buttered buns with Cajun White Barbeque Sauce.
Cajun White Barbeque Sauce
  1. Combine all ingredients then refrigerate until ready to serve. Refrigerate to store up to 2 weeks.

Notes

You can use chicken breasts but they won't be as juicy and tender as thighs.

  5. Any recommendations for cooking in the oven (when grilling is not an option)?

    1. 45 minutes at 350, flip the chicken every 15 min. I then turn the temp to 450 for 15 minutes, to crisp up the skin.Heaven! I used the pan drippings with rice and fresh chives...dang good!

  9. I cannot wait to try this! Thighs are my favorite cut and I love finding new ways to cook them. This could easily be made in the oven during winter, but thighs and a BBQ make a great combo. I will post when I make it. Thanks for sharing!

  14. I ran out of worcestershire sauce and dont use dijon in my home however in a pinch replaced Worcestershire sauce with A1 steak sauce and used Ken's honey mustard which is a staple in my home.used the same amount as called for in recipe for dijon and w. Sauce. This marinaide is amazing.

  16. I don’t normally comment but this was DELICIOUS! The only thing I added was a couple of splashes of sherry vinegar. Didn’t have dijon so used grainy pub mustard. A definite keeper!

  17. Made this for the fam tonight and it's keeper! I didn't have soy sauce so I used coconut aminos. Super good. Leftovers will make great quesadillas, a wrap or on a salad!

  18. So this recipe showed up today on my Facebook feed and I already had all the ingredients. Girl! I’m in love with this recipe. Hubby asked if we could have it again as there weren’t any leftovers (I halved the recipe for 5-6 thighs). Love how the flavors from the marinade just go so well with the sauce. And it’s super easy! Hi there! While I’m not able to respond to every comment, I try hard to answer any questions that haven’t been addressed in the post, recipe or in other comments.

I can tell you now 1) I have no idea if you can substitute Minute Rice or brown rice in my recipes because I’ve never used them and 2) If I know how to convert a recipe to a Crock Pot version, I will make a note about it (otherwise, I don’t know).
