Cake Mix Cookies

Super easy cookies made with your favorite flavor cake mix and chips or morsels.


Today was the day I did all my holiday baking. In my mind, I was going to spend a whole day in the kitchen with my little cherubs. We would laugh and sing and stir and sprinkle while a picture-perfect fire crackled in the fireplace and carols rang out from our hearts.

That is not what happened.

They, not being completely interested to start with, coupled with a grand lack of patience on my part resulted with them upstairs doing whatever and me in the kitchen alone. Meh. I turned on HGTV, poured a glass of wine and had a good day anyway.

Several hours later, Husband took the kids and one very excited golden retriever on a long walk and left me alone to finish everything up. As I was standing there wiping up powdered sugar from the counter I noticed the mailman pull up. On a Sunday. What the what??

Earlier in the week I found a box hidden under my doormat (well, somewhat camouflaged anyway). The box had the manufacturer’s logo stamped all over it so anyone who wanted a ridiculously expensive pair of ridiculously popular boots could have spotted them from a mile away. The driver had taken the time to cover the box with the mat. Score one in my book for the USPS.

I met the driver at the door and noticed there were already two boxes at my feet. He was holding a third and said he’d already been by once but his paperwork didn’t say I had three packages (just two) but when his route was over he had an extra box. Not being our normal mailman, he said he was afraid it might get lost in the shuffle if he returned it to the post office so he came back to make sure I got the package before Christmas.

I was officially impressed with the USPS. Wanting to show him some sort of gratitude I looked at him and asked, you like cookies?

By the time he pulled off I’d loaded him down like a pack mule with a bit of everything I’d cooked today. He was as tickled with his goodies as I was with giving them to him. And that little exchange more than made up for the fact that my babies aren’t babies anymore and I’d had to do my baking without them.

OK, so on to the cookies! This is the easiest recipe ever! When you want to whip up something quick or have a day like mine and want to have a large variety of cookies without huge batches (or effort), these are perfect!

I used the caramel Nestle Toll House DelightFulls because Husband laid an egg when he spotted them in the grocery store (he has serious issues with caramel). And also because I figured it would be the perfect amount of chips for this size batch of batter but you can absolutely use 1 1/2 cups of chocolate chips or other morsels.

Cake Mix Cookies! Make these super easy cookies from any cake mix using any morsels.

ingredients:

  • 1 box chocolate cake mix 
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups chocolate chips

instructions:

How to cook Cake Mix Cookies

  1. Add eggs and oil to a large bowl or stand mixer then mix well. Add dry cake mix then mix on low until well combined (about 1 minute). Stir in chocolate chips.
  2. Refrigerate batter for 30 minutes to firm up a bit. Roll batter into 1-inch balls and place on a cookie sheet two inches apart.
  3. Bake at 350 degrees for 8-9 minutes or until set. Return the batter to the fridge between batches to make sure it doesn't get too soft.

NOTES:

I used Duncan Hines Dark Chocolate Fudge cake mix and Nestle Toll House DelightFulls in the batch pictured.
You can use any flavor cake mix and any type of chips or morsels for this recipe.

I have one DD who is 21 and the other is 14 and they no longer want to help, but they sure as heck still want the goodies :oP Maybe I'll bribe them with goodies to help with the clean up? lol. Your cookies look divine and I am definitely going to give them a try.

  2. I've got to try this cake mix cookie recipe. I tried making cookies yesterday from a "scratch" recipe and had a total fail. Flat, ugly cookies was not what I was going for. So now it's time to try starting from a mix and these sound wonderful. Thanks.

  4. These are delicious we made them for santa! Haha i used duncan hines triple chocolate (or something like that) and made them larger to end up with 24. they are amazing! Thanks for the recipe! Also id never made the cake mix cookies so wasn't sure if they were done but took them out at 8 minutes (they had risen a bit and kinda pale) but once they cooled they sunk and had a nice dark color like pictured. hope that's helpful for anyone making them for the first time lol

  6. I make cake mix cookies at least once a week. My favorite is using white cake mix and using milk chocolate and white chocolate chips.

  7. I love making cookies from a cake mix.. I usually divide the batter into 3 and make different ones .. add peanut butter, choc chips and even have made coconut and maraschino cherry cookies....the cherry chip cake mix makes great cookies too...just the right amount for us.

  8. I have a question - now that all the manufacturers have changed the amount of cake mix in their boxes (down from 18.5 ounces to 15.25) - should I still use 2 eggs and 1/2 cup of oil or do I need to adjust? If so, how much should I use? Our church is celebrating 60 years as a parish later this month with a special coffee hour and I thought these would be perfect to bring. Help!

    1. Hi Holly, I've used several different brands over the years and never had any issues. I most often use the Aldi brand which is 16.5 oz. Hope that helps!

Hi there! While I’m not able to respond to every comment, I try hard to answer any questions that haven’t been addressed in the post, recipe or in other comments.

I can tell you now 1) I have no idea if you can substitute Minute Rice or brown rice in my recipes because I’ve never used them and 2) If I know how to convert a recipe to a Crock Pot version, I will make a note about it (otherwise, I don’t know).
