Mocha Fudge Pie with Kahlua and Starbucks

What do you get when you combine Kahlua liqueur with fudgy brownies and Starbucks coffee?   Complete and total awesomeness.  And the best part?  This recipe is complete and total awesomeness and it's wicked easy!  You’re going to look like a total rock star when you whip this pie out.  And no one will ever know how ridiculously easy it is to prepare!  Holla!

Oh, and another plus?  This freezes beautifully!  The recipe makes two pies… one to eat now and one to throw in the freezer* to wow your in-laws with the next time they decide to show up unannounced for a weekend stay.

Take care to grease and flour your pan or your "slice" of pie will look a hot mess like this!
Mocha Fudge Pie
with Kahlua Liqueur and Starbucks Coffee
1 fudge brownie mix
Eggs and oil for brownies
½ cup Kahlua (approximately), divided
1 serving Starbucks VIA® Ready Brew**
1 ½ cups milk
2 3.9-oz. boxes instant chocolate pudding
16 ounces frozen whipped topping, thawed

Grease and flour the bottom and one inch up the sides of two 9” deep dish pie pans (or one 13x9 baking dish).  Don’t skip this step or your pie “slice” will look like mine because it will be impossible to serve without obliterating it... and don’t try to just spray with cooking spray because that’s what I did and you see how well that turned out!

Mix 3 tablespoons Kahlua with the Starbucks VIA® Ready Brew or instant coffee granules and set aside to dissolve.

Mix brownie batter per manufacturer’s instructions for fudgy brownies (not cake-like) substituting water with Kahlua (usually ¼ cup).  Divide batter evenly into pie pans and bake at 350 degrees for about 25 minutes or until just done.  Cool completely.

Blend Kahlua/coffee mixture and milk with an electric mixer.  Add pudding mixes and beat on low for two minutes.  Fold in half of whipped topping.  Spread pudding mixture evenly over both brownie pie crusts.

Top pies with remaining whipped topping, cover and refrigerate until ready to serve.

* Freeze UNCOVERED for several hours and THEN cover with aluminum foil or plastic wrap.  This way, the pretty whipped topping keeps its pretty shape when frozen.  Be sure to uncover it before you defrost it so it stays pretty.

**Use one single serving Starbucks® VIA Ready Brew or 2 teaspoons standard instant coffee granules.
